Chef Praneel Singh's Girmitya degustation traces the Indian-Australian story across our menu — zucchini-flower pakora, Mooloolaba prawn tartare, besan-dusted Blue Eye Cod, a saffron-and-coconut bouillabaisse with West Australian langoustine, and a warm three-milk Samai to finish.
