Double cured Irish Organic Smoked Salmon. Buttery, earthy.

Kippered, (or as New Yorkers call it "baked salmon") is made from the fattiest, richest salmon. It’s hot smoked and perfect for a bagel or salmon salad.

What some called "old-fashioned lox" this belly lox is fairly heavily salted and not smoked.

Caught off of Alaska, this fish is buttery, rich black cod can be sliced or better flaked to add to a cracker, bagel, bread, or enjoyed by itself. *May contain bones. We try to remove the majority of pinbones in all hand sliced fish*

Farmed in the Netherlands. This caviar is prized for its petite grain and light grey to slate color profile.

Only 5% of the harvest qualify as this Platinum Osetra. The texture is firm, with a nutty flavor and a briny aftertaste.

Like salmon, caviar should also be purchased by the 1/4 lb. Platinum grey is one the rarest colors on the caviar spectrum, with only 5% of the harvest technically qualifying as this Platinum Osetra (acipenser gueldenstaedtii).

Sevruga is the smallest, most densely flavored, and perhaps the most intensely coveted variety of sturgeon roe. With a silvery glow and an exceptionally fine grain, firm texture, creamy and nutty flavor.

From the smallest breed of sturgeon, these golden to dark brown brown colors have a glossy, shiny appearance, boasting a lightly nutty taste that is both smooth and robust with very tiny, snappy pearls.

With a regal golden glow and a fantastically clean, buttery flavor and aftertaste. As only 8% of the harvest, gold is one of the rarest classifications.

Representing less than 3% of the harvest, Two-Tone Osetra is a rare selection, with striking, dual coloration and large grain size.
