Hyderabadi Biryani (Chicken on the Bone) Prepared using the traditional dum technique, fragrant basmati rice and delicately marinated chicken on the bone are layered and slow-cooked in a sealed pot, guided by the BKC chef’s mastery of time, spice, and balance. Deeply aromatic, unhurried, and true to tradition. Slow-cooked on dum, sealed with spice and patience.
