We used 9 uniquely different lots of Mosaic, from 6 different harvest years (2020,2021, 2022, 2023 & 2024!?), from 10+ different farms that we know of (because some lots are blended), in 2 different forms - T90 pellet & Cryo Pellet. Ok, still with us? So by using this many different types of Mosaic, it allowed us to create more depth and gave us more control of the outcome than your typical boring ass single hop beer. 5% Beer Žatecký Světlý Ležák is brewed according to a recipe created by Tomas Lejsek, a wellknown Czech brewmaster. This recipe is distinctive because of the use of unique hops from Žatec. It gives the beer a mildly bitter taste and a well-balanced aroma. The Żateckie hop, also called Saaz, dates back to the first half of the eleventh century. In 1261 a brewery was formed in Žatec that brewed beer valued for its "extraordinary virtues, essence and power". In the eighteenth century, there were already 30 malthouses and 4 breweries. At present, Zatecky hops are still grown only in the area of ​​Žatec on the surface of only 40 km2. This hop is recognised by beer professionals as one the best in the world. STS Pils is a classic German-style pilsner but with a Russian River twist because we dry hop this beer with a small amount of European hops. It is straw in color and will often have a slight haze due to the fact that there is a small amount of yeast left in the beer. This beer is hop-forward with a firm malt foundation, strong lager yeast characteristic, and a dry, bitter finish. A truly great Pilsner is a difficult beer to perfect, as its light crisp flavor profile leaves little room for error. Modern brewing techniques (such as open-top fermentation) and old-world traditions create the distinct qualities in STS Pils. -Russian River

It is a low-alcohol, highly carbonated, refreshingly light-bodied wheat lager, with an oak-smoke flavor melded with a clean hop bitterness. The smoke character is gentle and flavorful. A moderate bitterness is evident which lingers throughout the finish. Food Pairing Grodziskie is a great anytime beer, with breakfast, lunch, dinner, or even at snack time. Piknik was brewed with a blend of distinctive European Pilsner malts and the unique Styrian Bobek hop, giving it a pleasant bitterness hugged by a soft malt flavor. Piknik was open fermented at 8°C, cold conditioned at -0.5°C for forever, and naturally carbonated. It pours clear with a rocky, distinctive head. 5.9% West Coast Pils Ok so, a few words about this style. You’ve probably noticed we’ve never really brewed one before, save for Timbo and collabs at friend’s spots. It’s not because we don’t like them - we really do! - it’s because it’s too close to (& often confused with) the beer we brew all the time - Happy Little Clouds, our Contemporary American Pilsner. So, we wanted to use this space (& beer) to explain the differences. HLC is an 8 week beer, brewed like a traditional German Pilsner, but with a little more hops in the WP and a light Dry Hop. This WC Pils is a 5 week beer, and while the malt bill is similar and the yeast is the same as HLC, the hop load in the WP is 50% more than and the DH rate is TRIPLED (we used Nectaron, Mosaic & Citra). To us, this beer is closer to a West Coast Pale Ale than a Pilsner. Nomenclature be damned, it’s a bright, tropical, hop saturated crusher you’ll be yearning for, just like long time sunshine. - Cloudburst

Before packing, this beer was then blended 2:1 with saison conditioned over kiwi berries grown by Red Cedar Farm outside Poulsbo. -Mirage

6.3% Our Sunstead series captures the essence of perfectly ripe stone fruits, allowing us to savor the warm flavors of summer all year long. The base beer is a blend of one, two and three-year-old Danish Wild Ales aged in white wine barrels. We racked this onto freshly destoned and crushed white Saturn peaches at a rate of over 600 grams of peaches per liter, and left it to macerate with the fruit for over a month before bottling. This complex, soft and juicy beer tastes almost like biting into a fragrant peach, transporting you back to the high days of summer no matter when you drink it. -Insight Cellars

A blend of spontaneously fermented, barrel-aged beer from each of our first five seasons, re-fermented on local cherries that had previously been used to make (This Is A) Crush Story. 5% Shortly after we started distributing, we had our cursed old brewery truck break down while carrying a load of kegs to our distributor. Our distributor was about to close for the weekend, and we had no way to get them there in time, and nowhere to store them in good condition during the opressively hot weather. As is our habit during times of stress, we sought a cold beer at the newly opened taproom and growler station around the corner, Tin Bucket. After chatting with the owner, he expressed his disappointment at not being able to get our beer. To cut it short, he and his partner bought the entire truckload, saving not just the beer, but quite literally our business. This beer is for them. We worked with them to blend this from three different years of our lambic inspired barrels. We chose a blend with a beautiful and expressive Brett character that has only blossomed during its extended conditioning. Our favorite beer to date. - de Garde

We ferment Damnation with a Belgian yeast strain that gives it notes of fruit and spice. Damnation is refermented in the bottle to create its fine carbonation. 5.4% Inspired by one of our favorite Belgian saisons, Lenticular Clouds features a robust base of spelt—an ancient form of wheat—that lends a soft mouthfeel to what is otherwise a bracingly dry and effervescent classic. 3.2% Passer Through Walls was brewed with floor malted barley, malted spelt, and unmalted wheat. We hopped this Brett Table Beer in the kettle with Wai-iti, Strisselspalt, and Herbrucker then fermented it with a distinct yeast strain hailing from the Ardennes region of Belgium. Passer Through Walls was dry hopped with Wai-iti and Crystal then bottle conditioned with one of our favorite Brettanomyces strains. - Bizarre

5.8% Last summer we hosted Nat from Brouwer’s to taste through barrels and brainstorm concepts for this collab. Thinking ahead to a beer we would want to drink in springtime to celebrate this occasion, we landed on the classic combination of strawberry and rhubarb. We added deep red-flesh Puget Reliance and Seascape strawberries from the fine folks @sidhufarms along with rhubarb to a blend of puncheon-aged saison to make Julien come to life. The rhubarb plays an important role in accentuating the fruit character, bringing the intense scope of bright strawberry aromas and flavors to the forefront. Enticing notes of watermelon rinds and honeysuckle appear on the first sip, with electric tones of tart hard candy coming through mid palate. The finish is dry, making for an extremely drinkable experience. -Fair Isle

6.1% Our process for The Wet Hopped Ship. may be unconventional–the hops are as fresh as possible, going into the wort within an hour of harvest, but the beer takes quite a bit of time to age and develop a rounded flavor profile. The end result is a smooth beer with a floral, herbal nose and a refreshing, lightly tart, citrusy palate. It may not be the same as other fresh hop beers on the market, but it is uniquely a Garden Path product. -Garden Path

8% Oud Beersel Bzart Kriekenlambiek is a kriek lambiek that was finished with Champagne yeast. It was produced from 13 month old lambic with Haspengouwse cherries aged for 6 months in 130 year old barrels.

8% BZART Lambiek merges two major traditions, the traditional method used for sparkling wine and the spontaneous fermentation that defines Lambic. The result is a natural, sparkling Lambic beer from Belgium. Lambic is one of the oldest surviving Belgian styles, with roots around 1300. The Lambiek Oud Beersel used for BZART ferments for twelve months in wooden barrels, then is bottled with a tirage liqueur of sparkling wine yeast and sugar for a second fermentation. The beer ages in the bottle for at least nine months, which creates and traps fine carbonation. Remuage and degorgement remove yeast sediment. No sweetening or liqueur d’expedition is added. The final beer is a dry, sparkling Brut Lambic with a complex flavor profile.

Blending of 2-year-old and 4-year-old lambics (for nearly 45% of the blend), to reach an average lambic age of over 33 months at bottling. A complex beer, with a long shelf life and an evolving taste.

6% 3 Fonteinen Schaarbeekse Kriek is the result of macerating local hand-picked Schaarbeekse cherries on young traditional lambic for at least one year, in a proportion of one kilo of sour cherries per liter of lambic. The cherry lambic is then blended with young lambic and bottles, after which our famous Schaarbeekse Kriek matures for another year at least in the bottle. Refined and with evolution in the glass. Natural fruit, no juice, syrup or sugars added. Unfiltered and unpasteurised. -3 Fonteinen

6% Hanssens Scarenbecca Kriek is a regularly released krieklambiek that is blended with wild Belgian cherries. It is bottled in 37,5cl bottles and is 6% ABV. The cherries used for this were originally of the Schaerbeekse vareity, however due to a lack of supply, Hanssens has switched to primarily Belgian Kelleris cherries from the Tienen area, supplementing these with Schaerbeekse cherries supplied by their growers. -Lambic.info

10% The St.Bernardus Abt 12 is the pride of our stable, the nec plus ultra of our brewery. Abbey ale brewed in the classic 'Quadrupel' style of Belgium's best Abbey Ales. Dark with a full, ivory-colored head. It has a fruity aroma, full of complex flavours and excells because of its long bittersweet finish with a hoppy bite. (10,0% ABV) Worldwide seen as one of the best beers in the world. It's a very balanced beer, with a full-bodied taste and a perfect equilibrium between malty, bitter and sweet. One of the original recipes from the days of license-brewing for the Trappist monks of Westvleteren. -St. Bernardus

8% St.Bernardus Prior 8 stands out with its fruity aroma, reminiscent of tree fruits like red apples, but complemented by exotic touches of figs and dates. The whole is rounded off perfectly by impressions of caramel and roast malt. The full taste is malty and fruity in equal measure and achieves the perfect balance between bitter and sweet. -S.B.

8% St.Bernardus Tripel is a traditional abbey ale brewed in the classic "Triple" style of Belgium's best Abbey Ales. It has a blond to pale amber color with a wonderful head, slightly sweet aroma and the orangey-grassy flavors of hops in the finish. Wonderfully drinkable and surprisingly light.

11% This is the house beer for the famous De Garre pub in Brugges, Belgium. Brewed using traditional Belgian triple base with three times the amount of malt allows the brewer to achieve the 11% ABV.

11.3% Dominant impressions of latte coffee with powerful chocolate aromas in the nose. The alcohol esters are enveloped with hints of autumn wood, citrus zest (orange, lemon) and freshly baked biscuits. The initial taste is sweetly sinful. Beer and chocolate trapped into one single glass, a liquid milky draught with a backbone of bitter malt. The alcohol warms the throat and, in the finish, you will pick up traces of cloves, citrus, orange and mocha. The heaviest of the Rochefort beers, the 10 is a quadrupel style beer and can be recognized by its blue label.

9.2% Originally called "Spécial," Rochefort 8 dates to the mid-1950s. The name comes from the original gravity in "Belgian degrees." Deep brown color; the flavor is vigorous and complex, with firm body to support the strength. The aroma has elusive notes of fresh fruit, spice, leather, and figs.

6.2% THE BEST BEER IN THE WORLD, PERIOD -Bottleworks. Orval beer is a high fermentation beer. The ageing process adds a fruity note, which strikes a subtle balance between the beer’s full-bodied yet complex flavour and bitterness. The beer was first brewed in 1931 and owes its unparalleled taste to the quality of the water, the hops and the yeast used. The brewery has selected very aromatic and unique hop varieties, which hark back to the first brewmaster of Orval, who hailed from Bavaria. The beer’s aromas are very pronounced while maintaining the right level of bitterness thanks to the English method of dry hopping. 12% The Gulden Draak Imperial Stout is a dark brown to black colored beer and is the heaviest beer in the Gulden Draak range with its 11° alcohol by volume. The typical roasted flavor is obtained by adding roasted, caramelized malt used exclusively for this purpose. It is a very well balanced heavy beer. The finish is rich and powerful. When tasting this specialty beer, you will discover aromas of banana and chocolate. The secondary fermentation comes into its own beautifully and will balance out the higher alcohols perfectly. - Van Steenberge

10.5% Gulden Draak has been breathing fire at the Van Steenberge brewery since 1986. This characterful, fiery beer was originally commissioned by the Cruyl brewery in Assenede. At the time, it was a festive beer brewed just once a year for the Assenede fanfare. Gulden Draak originated when Jozef Van Steenberge received one of his Italian customers back in 1986. The Italian visitor could feel the fire and insisted on buying the beer. At first, Jozef refused because he felt that the beer was too strong, but then he agreed on the condition that an order of 100 hectolitres was placed. At the time, it was a large amount that guaranteed an entire week of production. A beer with character also deserves a bottle with character, a unique white bottle, they decided together. -Van Steenberge

10.7% The unsurpassed Gulden Draak Classic as a dark triple of 10.5% alcohol received a strong addition after 25 years of ever-growing success, the Gulden Draak 9000 Quadruple. The particularly rich and complex flavor palette and full head of foam is also found in the Gulden Draak 9000 Quadruple. However, the sweet notes of caramel remain reserved for the Gulden Draak Classic. Gulden Draak Quadruple Family The new recipe based on 4 times more malt gives the Gulden Draak 9000 Quadruple a deep golden amber color and a slightly fruity aroma. 6% Duchesse de Bourgogne from Brouwerij Verhaeghe is the traditional Flemish red ale. This refreshing ale is matured in oak casks; smooth with a rich texture and interplay of passion fruit, and chocolate, and a long, dry and acidic finish. After the first and secondary fermentation, the beer goes for maturation into the oak barrels for 18 months. The final product is a blend of younger 8 months old beer with 18 months old beer. The average age of the Duchesse de Bourgogne before being bottled is 12 months.

11.5% Matt was inspired by Matt VandenBerghe (Bottlworks/Brauwers owner) and Matt Bonney (RIP) , who personify the spirit and dedication that has helped craft beer become the vibrant industry it is today. This Beer was originally Brewed to celebrate the tenth anniversary of Bottleworks, and will be released every few years from the Brewery. Matt is made with two Munich malts, two Smoked malts and two types of Belgian candy sugar. It is aged in Kentucky Bourbon and Apple Eau de Vie barrels from Clear Creek distilling. Matt is deep and lush with notes of apple, chocolate and smoke. -HOTD

6.75% For the 16th anniversary of Brouwer’s cafe, we collaborated with the North Fork brewery from Deming, WA to create 3 beers to celebrate Vern’s beer bar in Fremont, Seattle. Eric & Paul brewed spontaneous beers at each brewery with Mecca Grade malt and put aronia berries in the coolship. After a year of barrel-aging we introduced chardonnay lees from Domaine Drouhin. This is the unblended North Fork version utilizing Argentinian Cascade hops from 2006. 100% naturally carbonated by bottle fermentation with wildflower honey. Thanks for everything, Vern! 14% Unfined/unfiltered/spontaneous ferment Mavis’s Malbec is a very fun and lively expression of Malbec grapes hailing from Strand Vineyard in Naches Heights AVA. The vineyard is LIVE (low intervention viticulture & enology) certified and Salmon Safe in WA state. The grapes were spontaneously fermented on their skins and punched down daily before finishing off in stainless steel. It was bottled early, with the slightest amount of dissolved CO2 still in solution. It is full of big berry flavors, medium tannins and would pair well with creamy cheeses and games meat. -Barmann

Our Takju is a two-stage ferment (iyangju) with a juk base—short-grain rice that is ground into powder and mixed with filtered water under heat. Nuruk is added to the “rice oatmeal” and the microorganisms are cultivated over several days. In the second stage, steamed sweet/glutinous rice is added. After a period of saccharification and fermentation, the rice-wheat-alcohol mixture is filtered and further aged before bottling. 13.2% Maneki Wanko “Lucky Dog” is a playful, fun sake brewed in what is widely considered to be the historical heartland of sake, Hyogo Prefecture. The area is famed for Miyamizu, an excellent mineral rich water for sake making.
