We used 9 uniquely different lots of Mosaic, from 6 different harvest years (2020,2021, 2022, 2023 & 2024!?), from 10+ different farms that we know of (because some lots are blended), in 2 different forms - T90 pellet & Cryo Pellet. Ok, still with us? So by using this many different types of Mosaic, it allowed us to create more depth and gave us more control of the outcome than your typical boring ass single hop beer.       5.9% West Coast Pils Ok so, a few words about this style. You’ve probably noticed we’ve never really brewed one before, save for Timbo and collabs at friend’s spots. It’s not because we don’t like them - we really do! - it’s because it’s too close to (& often confused with) the beer we brew all the time - Happy Little Clouds, our Contemporary American Pilsner. So, we wanted to use this space (& beer) to explain the differences. HLC is an 8 week beer, brewed like a traditional German Pilsner, but with a little more hops in the WP and a light Dry Hop. This WC Pils is a 5 week beer, and while the malt bill is similar and the yeast is the same as HLC, the hop load in the WP is 50% more than and the DH rate is TRIPLED (we used Nectaron, Mosaic & Citra). To us, this beer is closer to a West Coast Pale Ale than a Pilsner.       5% Shortly after we started distributing, we had our cursed old brewery truck break down while carrying a load of kegs to our distributor. Our distributor was about to close for the weekend, and we had no way to get them there in time, and nowhere to store them in good condition during the opressively hot weather. As is our habit during times of stress, we sought a cold beer at the newly opened taproom and growler station around the corner, Tin Bucket. After chatting with the owner, he expressed his disappointment at not being able to get our beer. To cut it short, he and his partner bought the entire truckload, saving not just the beer, but quite literally our business. This beer is for them. We worked with them to blend this from three different years of our lambic inspired barrels.       5.8% Last summer we hosted Nat from Brouwer’s to taste through barrels and brainstorm concepts for this collab. Thinking ahead to a beer we would want to drink in springtime to celebrate this occasion, we landed on the classic combination of strawberry and rhubarb. We added deep red-flesh Puget Reliance and Seascape strawberries from the fine folks @sidhufarms along with rhubarb to a blend of puncheon-aged saison to make Julien come to life. The rhubarb plays an important role in accentuating the fruit character, bringing the intense scope of bright strawberry aromas and flavors to the forefront. Enticing notes of watermelon rinds and honeysuckle appear on the first sip, with electric tones of tart hard candy coming through mid palate.       8% BZART Lambiek merges two major traditions, the traditional method used for sparkling wine and the spontaneous fermentation that defines Lambic. The result is a natural, sparkling Lambic beer from Belgium. Lambic is one of the oldest surviving Belgian styles, with roots around 1300. The Lambiek Oud Beersel used for BZART ferments for twelve months in wooden barrels, then is bottled with a tirage liqueur of sparkling wine yeast and sugar for a second fermentation. The beer ages in the bottle for at least nine months, which creates and traps fine carbonation. Remuage and degorgement remove yeast sediment. No sweetening or liqueur d’expedition is added. The final beer is a dry, sparkling Brut Lambic with a complex flavor profile.

      8.6% bottling date: 17/06/21 This iteration of Zenne y Frontera is a Amontillado, Oloroso & Palo Cortado Blend For this Zenne y Frontera, we blended lambikken originating from seven different sherry barrels; three Amontillado barrels, two Oloroso barrels and two Palo Cortado barrels. The barrels were sourced with two different bodegas: Josefa Pérez Rosado (closed) and Fernández-Gao (started up again in 2014). The weighted average age of this lambik is 28 months at the moment of bottling. Three quarters of the five different lambikken used was brewed by us, and about half of the cereals of these brews were Pajot-grown. We did not blend in young lambik. -3F

      7.7% For this, Druif, we co-fermented Belgian Dornfelder with one- and two-year old lambik in a 53/47 cut. We used the freshly pressed and shortly skin-macerated juice and put the unfermented juice with young lambik for continued fermentation in stainless steel. Afterwards, we blended with two-year old lambik. All lambikken originate from seven different barrels and seven different brews. The final fruit intensity is 31.6%. EN 3 Fonteinen Druif maceration of grape (must) on / the co-fermentation of grape juice or wine with traditional lambic. No addition of juices, syrups or artificial sweeteners. Unfiltered.       11.3% Dominant impressions of latte coffee with powerful chocolate aromas in the nose. The alcohol esters are enveloped with hints of autumn wood, citrus zest (orange, lemon) and freshly baked biscuits. The initial taste is sweetly sinful. Beer and chocolate trapped into one single glass, a liquid milky draught with a backbone of bitter malt. This beer begins with a density of 16.5º Plato is 7.5% ABV. “Rochefort 6” is the oldest Rochefort Trappist beer, and was brewed empirically until the end of the Second World War. Until 1958, this was the only Rochefort beer that was bottled in both 33 cc bottles and 75 cc bottles. It has a strong malt taste and is slightly bitter.

At the time, it was a festive beer brewed just once a year for the Assenede fanfare. Gulden Draak originated when Jozef Van Steenberge received one of his Italian customers back in 1986. The Italian visitor could feel the fire and insisted on buying the beer. At first, Jozef refused because he felt that the beer was too strong, but then he agreed on the condition that an order of 100 hectolitres was placed. At the time, it was a large amount that guaranteed an entire week of production. Though Germany was the center of the lager revolution, Düsseldorf was one of the only cities to hold onto its tradition of ale brewing in the form of Altbier.       We were blessed with 1.5 tons of Grüner from a small one acre plot at the western most part of Morning Mist Vineyard, located in the deep coastal ranges of the Willamette Valley.
