Pale Ale - American, 6.0% // Loads of Mosaic hops for huge aroma and flavor in this dry hopped, low bitterness beauty. Solely Mosaic hops create lively aromas of grapefruit, papaya, and dank pine.

IPA - American, 7.2% // Bursting with massive hop aromas of grapefruit, pine, and tropical fruits from huge additions of Columbus and Citra, this classic IPA is perfectly balanced by a healthy malt backbone and smooth, bitter finish.

IPA - New England / Hazy, 6.6% An old school Northeast Style IPA. Dry hopped with Loral for a juicy hop flavor and aroma with notes of mandarin & tangerine. Golden Promise malt provides body without a cloying sweetness. Moderate ABV for maximum drinkability.

Pale Ale - American, 5.8% // Traditional American Pale Ale brewed with single Cascade hops for a bold and hoppy finish, refreshing and crisp. Pre-dating Route 66, the Lincoln Highway was the first transcontinental road across the country and winds across Chicagoland through Geneva where Art History's taproom is located.

IPA - Imperial / Double, 8.0% // Just because civilization collapsed doesn't mean we forgot our manners. We still say "please" & “thank you,” we still partner with our friends (Lookin’ at you Foam Brewing) and we still brew some kick ass beer. What Are We? Savages? blends Leopold, Krush, Simcoe Cryo and Citra hops into a DIPA that’s bold and bursting with an insane aroma and notes of juicy pineapple and zesty orange. We're survivors, not savages.

Sour - Other, 6.4% // In a world that crumbled… Refrigeration ceased. The milk spoiled. The vegetables withered. The pastries went stale. The perishables perished. Even the non-perishables were no longer particularly non-perishable. But one remained. One final can, waiting patiently amidst the swirling dust. A humble vessel containing the food once hailed for its mystical powers. A fruit of legend. A fruit of sorcery. A fruit that could, under the right circumstances and level of abundance, produce music from the human soul. BEANS. Our final DrekkerFest 12 beer is a sour brewed with our pals at Mikerphone, featuring coconut, Cara Cara orange, tangerine and coffee. It may not technically contain literal beans as one may know them. It is the spirit of beans. EVERYTHING DIES. EXCEPT BEANS.

Sour - Other, 5.8% // INCIDENT REPORT #1666: A previously unidentified flavor containment unit discovered behind a deep freezer. The substance appears to be a tropical, creamy sour brewed in collaboration with One Drop Brewing Co. from Australia. Contents include mango, guava, banana and vanilla soft serve. This inventory item has been reviewed and processed for recreational consumption. Designated as “Radioactive Paradise”. Hazard Level: unclear, but the government said it’s probably fine Deliciousness Level: confirmed in triplicate

Sour - Smoothie / Pastry, 6.0% // We have good news and bad news. The bad news: the world is apparently falling apart. The good news: this beer. Our collab with Edinburgh’s Vault City brings together tart, juicy marionberry and plum with pastry cream, vanilla and cinnamon for a rich, jammy, dessert-like sour that’s pretty much the doomsdanish of the apocalypse pantry. Y’know, the sort of thing you’d crack open after scavenging the wasteland for something comforting. So dinnae fash, pal. We found sweet treats! Everything’s fine… ish.

IPA - Imperial / Double New England / Hazy, 8.0% // Casual Loop is a double dry hopped New England IPA. With a stupid amount of citra added and citra cryo, this beer is bursting with citrus aromas and has a creamy tropical finish.

IPA - Imperial / Double, 8.5% // Pours with the structure of a focused experiment; malted barley, white wheat, flaked wheat and malted oats creating the platform from Citra, Belma, El Dorado and Galaxy hops. The flavor drives the hop intensity across a pillowy grain bill and the finish lands clean, confident and fully dialed in.

IPA - Imperial / Double, 8.5% // When Phil, Kyle, Chris, and John made their way to this side of the Hudson River, we spoke about all the good that is happening in the Hudson Valley for Beer. With more and more breweries producing great liquid, the Hudson Valley Region has become a beer Mecca. Linear phase represents the pinpoints between Middletown and Wappingers, both of our respective homes and all of the other spots helping to put the region on the map. Starting off with a base of flaked wheat and flaked oats we used a whirlpool of Citra and Strata before dry-hopping this beer with Citra, Strata, and Galaxy. Linear Phase pours a beautiful creamy bright yellow with an aroma of tropical citrus and grass fields. Flavors of pungent orange, passionfruit, melon, and berry come together in a soft and creamy mouthfeel with our #EQjuice finish with just a touch of bitterness to round things out.

IPA - New England / Hazy, 6.2% // When conditions reach the right point, everything changes. Phase Transition (IPA) features a grain bill of malted barley, flaked oats, torrefied wheat, and malted oats to help create a soft, pillowy foundation. Hopped with Enigma, Mosaic, and Galaxy, layers of tropical aromas lead into flavors of tangerine, peach nectar, passionfruit, tropical melon, and pineapple, while subtle notes of grapefruit and lime zest add a refreshing citrus edge. The body is soft and saturated with a smooth, balanced bitterness that lets the tropical and citrus character linger through a bright, juicy finish.

IPA - Imperial / Double New England / Hazy, 8.4% // Delta Function is our collaboration with Confluence Brewing Co. Built on a four-grain foundation of malted barley, malted oats, white wheat, and flaked wheat, the malt profile brings a soft, pillowy body with subtle notes of fresh bread, light biscuit, and gentle grain sweetness. Citra Incognito and Enigma enter the whirlpool, followed by a heavy dry hop of Riwaka, Enigma, Citra, and Galaxy, layering aromas of ripe passionfruit, mango, pineapple, lime, and bright citrus. Flavors follow with juicy tropical fruit, tangerine, passionfruit, and ripe peach, backed by hints of dank citrus and resin before finishing soft, bright, and intensely hop-forward. When all the variables align, you get a Delta Function.

Cider - Dry, 8.0% // Lady Legendary is back for the first time since 2023 — and she's better than ever. Legendary Dry's tannic sister returns as part of Stormalong's Rare Apple Series. Franklin, Somerset Redstreak, Esopus Spitzenberg, and Dabinett — each fermented separately, then blended at just the right ratios. Honey sweetness, white floral, and honeysuckle on the nose. Smooth honey richness, drying tannins, and just a whisper of oak on the finish. Now in 16oz cans. Grab one now. Put one in the cellar. She'll only get better with time.

Citraholic is double dry hopped for two weeks with an abundance of Citra (and a touch of Columbus) imparting heavy aromas of citrus & tropical fruits with melon and gooseberry nuances. Wheat Beer - Witbier / Blanche, 8.2% // P.I.W. is the big brother of our Shepplekofeggan Wit. We doubled the IBU's to balance the alcohol and used a myriad of spices, headlined by a four peppercorn blend, accented with fresh orange peel and coriander. The result is a big, yet light bodied Wit with citrus and pear aromas that finishes clean and peppery.

IPA - New England / Hazy, 7.1% // This Northeastern IPA is a big ol' hazy juice bomb packed with Citra, Mosaic & Simcoe hops; giving off flavors of bright citrus, passion fruit, berry and pine.

Lager - Pale, 5% // John likes bees. John's like of bees led him to hanging out with other people who like bees. Some of the other people who like bees work at The Field Museum. The Field Museum was opening a bistro and bar. John was opening a brewery. And that is pretty much the story of how Off Color and The Field Museum collaborated to make this crisp, clean pilsner with a dry-hopped bite far inferior to Sue's.

Lager - Helles, 4.6% // Our Twelfth Anniversary is in September and as we've always done since our very first Anniversary in 2015, we brewed a lager to celebrate! This year, we brewed a "Engish Style Helles," which is our take on a German Helles using English ingredients. English Maris Otter malts give this a lightly toasted, bready maltiness, balanced by both a traditional English hop (East Keg Goldings) and a newer English hop (Ernest) providing a fruity and floral hopping.

India Pale Ale - New England / Hazy, 6.6% // Our signature American pale ale balances light, crisp, malt character with an abundance of hop-derived aromatics and flavors from the use of Citra and Columbus. The fragrant nose is fresh citrus, tropical fruit, and peach. Bold flavors of pineapple and mango mix with dank notes of zesty citrus and fresh pine needles. Märzen / Marzen, 5.5% // We have a deep appreciation for the traditional German beers that laid the groundwork for what we brew and drink today. Our Oktoberfest is an ode to that tradition. Märzen / Marzen, 5.5% // Crafted as a flavorful session beer, Bell's Octoberfest Beer is perfect for a week-long wedding celebration in Germany or the start of the Michigan autumn. As with Bell's Lager Beer, Octoberfest spends a full six weeks maturing in the fermentation vessels. Unlike its cousin, Octoberfest trades in the assertive hop presence for a focus on a light caramel malt note, lending body without too much sweetness.

Märzen / Marzen, 5.2% // The echo of a classic—burnished like aged copper, a warm glow marking the season change. Notes and aromas like caramel drizzled, oven-warmed biscuit. Structured, not sweet—like toasted hazelnut. Natural carbonation carries, anchoring tradition. Thoughtful, and unmistakably ours.

Märzen / Marzen, 5.4% // We brewed this German inspired ‘March Lager’ often found at the annual Munich festivities in Illinois, in July, so gesundheit to you, too! Expect a rich, bready, deeply malty beer that’s both creamy and crisp, thanks to our fully attenuative yeast strain and an ambitious mash schedule. Enjoy it in September like they do on the Wiesn!

Festbier, 5.2% // Collaboration with Beer on the Wall. Brewed like a traditional English Pale Ale with base malts full of cookie and honey flavors right alongside German specialty malts for a bit of nutty and toasty complexity. Enjoy with a giant pretzel or a spicy curry.

Festbier, 6.0% // Each year, we partner with a German brewer to create a traditional Oktoberfest, but this modern Festbier breaks the mold. A collaboration with innovative Bavarian brewer, Hoppebräu, our 2026 Oktoberfest is lightly dry-hopped for a hint of floral character, balanced by biscuity flavor thanks to Munich malt. But it won’t last long; this seasonal beer will be gone before you can say prost!

Märzen / Marzen, 5.4% // This “export” style lager, brewed for our annual Oktoberfest celebration, is malty yet well balanced like the bier traditionally served at Oktoberfest in Munich. However, our Festbier has a tale/tail of its own–Oachkatzlschwoaf (pronounced “oh-khut-zel-schvoaf”) translated is “tail of a squirrel”…just a little Bavarian humor.

Pilsner - German, 5.2% // Brewed in the style of a Northern German Pilsner, a style characterized by a dry and crisp finish. Balanced malt character with medium to medium-high bitterness. Brewed with German Pils malt and the classic German hop, Tettnang. Perfect Slow Pour candidate.

Lager - Helles, 5.2% // An ode to the everyday beer of Bavaria, where the locals prefer drinking their lager rather than talking about it. Easy-drinking with a creamy white head and cracker-like taste. Brewed with German Pils malt and Hallertau Mittelfruh hops for a light Nobel hop character.

Lager - American, 4.6% // Easy drinking, low ABV, American Lager. Horizontally lagered and naturally carbonated through the Kräusening process - adding a small amount of vigorously fermenting lager beer to a larger amount of lager beer that has just finished fermenting. Brewing process used by German brewers centuries ago. American 2 and 6 row malt and corn. Akoya hops.

Wheat Beer - Hefeweizen, 5.1%, 16.9oz // Fragrance and taste of the “yeast-cloudy” wheat beer are distinguished by a refined top-fermented flowery-yeast character and an unmistakable, distinct banana aroma. First sensation on the taste buds is full-bodied, very soft and mild with a lively, champagne-like sparkle. A light, typical wheat beer taste is expressed, the bitter tone of which can scarcely be detected. The sparklingly refreshing Ayinger Bräuweisse will impress every wheat beer connoisseur with the first mouthful.

Lager - Munich Dunkel, 5%, 16.9oz // Up until the Second World War, dark beer was the predominant beer type in the Munich area. The hard water found in the region played a special role in producing this specialty. In his book “Beer International”, the world-renowned English beer writer, Michael Jackson, accurately describes the Ayinger “Altbairisch Dunkel” as: “A good example of its kind. Impenetrably dark with a golden-brown gleam when held up to the light, and with a warm aroma and malty taste, while summoning up coffee taste sensations on going down. It is brewed from five types of malt (two of which are torrified dark), and it is only lightly hopped.” It is produced using the traditional double fermentation process.

Pilsner - Italian, 5.2% // Tipopils might seem like the most ‘normal’ of our beers, but it is actually the one that leaves the most impression, that makes you fall in love. It whispers stories of barley fields and hop gardens and delivers the quintessence of their aromas intact. Tipopils is an “archetypal” beer: it corresponds to and embodies the idea of ​​a pale beer that has sedimented in our DNA over the course of many centuries. A timeless beer classic, with special balance and elegance… An embrace of malts and hops that has set a precedent since 1996.

Lager - American, 5.0% // Party Wave - Wheated Tropical Lager ABV: 5% A juicy full bodied tropical lager that is brewed with lots of wheat and a blend of citra nnd ekuanot hops to create a hearty body with a smooth soft tropical expression while still maintaining a refreshing lager finish.

Pilsner - German, 5.0% // Conjured from tradition and forged through boiling fires of modern brewing techniques, this epic pilsner is one to behold. Crisp, crushable, and incredibly drinkable, this beer slakes all thirsts both going into and coming out of the pit. Raise a pint and usher in the Wings of Doom.

Lager - Pale, 6.2% // Hoppy Lager - Across the cosmos (or really just the distance of Logan Square), we've brought together a dynamic combination. We feel you shouldn't have to choose between a thiolized, new-world IPA and an easy drinking, crisp lager, so we threw our brains in the particle accelerator and came up with these paired offerings. Our Lunar Dawn has huge amounts of kiwi, green grape, and white melon which clips off to a grassy-dryness that's perfect for the anytime the sun's out in space.

Lager - American, 5.0% // Coors beer, first introduced by Adolph Coors in April 1874, is brewed in the Rockies for a uniquely crisp, clean, and drinkable "Mile High Taste".

Lager - American Light, 4.2% // Coors Light is Coors Brewing Company's largest-selling brand and the fourth best-selling beer in the U.S. Introduced in 1978, Coors Light has been a favorite in delivering the ultimate in cold refreshment for more than 25 years. The simple, silver-toned can caught people's attention and the brew became nicknamed the \Silver Bullet\" as sales climbed."

Lager - Mexican, 4.5% // Corona Extra Mexican Beer is a crisp, clean and well balanced cerveza with fruity-honey aromas and a touch of malt, making it a great tailgating beer, beach drink or barbecue refreshment.

Blonde / Golden Ale - Other, 6.4% // Our fruity and juicy blonde ale will quickly transport your palate with a taste of paradise. Tropical flavors of pineapple, coconut, mango, peach and guava are balanced by smooth maltiness. One sip and you'll be singing the song of the islands. Aloha!

Wheat Beer - Hefeweizen, 4.8% // Easy to drink with a lingering, pleasant aftertaste. A rich, yolky-orange wheat beer, featuring the aroma of clove and fruit in perfect balance; refreshing on a warm day, with a hint of mandarin-orange-like acidity; huge effervescent head. Thick lasting foam that leaves an attractive lacing after every sip.

Kölsch / Kolsch, 4.6% // A refreshing, mildly spicy, mildly fruity ale. A happy beer, easy to drink, makes you want to have glass after glass. A wonderful stand of foam above the rim of a traditional .2L Stange.

Pilsner - German, 4.6% // Say it with us: "P I L S" - not Pilsner. A German-Style Pils inspired by Franconia. Bitter, but not bracing; hoppy in good measure; with a malt showcase like a fancy charcuterie cracker. Smooth, dry, snappy. Note: The beer called, “Dovetail Pilsner,” is a Czech-style pilsner, and completely different than “Dovetail Pils,” a German-style pils.

Lager - Vienna, 5.1% // Mozart played full-volume in the brewhouse as the Dovetail Vienna Lager was born. Copper in color, with a warm, malty character, it is brewed with 100% Vienna malt and Styrian Golding hops.

Festbier, 5.5% // German Munich and Vienna malts give an almost sweet, malty flavor while a pinch of mesquite-smoked malt brings a subtle, smoky note to this "Fall Pants Party Beer".

This is the style our Goldfinger ancestors would have brewed and certainly would have enjoyed.

Pilsner - German, 4.9% // Our Pils is a beautiful representation of German pilsner malt and noble hops. This beer is for the drinker who prefers a little more hop presence with a subtle bite that dissipates smoothly into a depth of floral, herbal, and honey flavor. We pour this beer slowly (be patient, it’s worth it!) over the course of approximately five minutes to allow all of the aromas and flavors to meld into your glass and deliver it to you with a soft pillowy head. The inspiration for this beer comes from Brewer Tom’s unforgettable experience drinking his favorite Pilsner in the German Alps.

Lager - Vienna, 5.5% // One of our favorite lager styles of beer to brew for its malt complexity, yet infinite drinkability. Due to the double decoction method of brewing, we achieved a unique depth of malt flavor that is balanced by Czech Saaz hops. This beer is copper in color with a medium body for a slightly more robust drinking experience.

Wheat Beer - American Pale Wheat, 4.2% // Inspired by the city of Chicago and densely populated with flavor, 312’s spicy aroma of Cascade hops is followed by a crisp, fruity ale flavor delivered in a smooth, creamy body that's immensely refreshing.

Lager - Pale, 5% // John likes bees. John's like of bees led him to hanging out with other people who like bees. Some of the other people who like bees work at The Field Museum. The Field Museum was opening a bistro and bar. John was opening a brewery. And that is pretty much the story of how Off Color and The Field Museum collaborated to make this crisp, clean pilsner with a dry-hopped bite far inferior to Sue's.

Pilsner - Czech, 4.4% // In 1842, at our brewery in Plzeň, brewer Josef Groll introduced the world to the first golden ‘pilsner’ lager, and changed beer forever. His invention soon became the most popular style of beer on the planet. We’ve brewed Pilsner Urquell in the same brewery using the same recipe for over 175 years. Today, we still insist on using traditional methods, like triple decoction and parallel brewing in wooden lagering barrels. It takes longer but means we never compromise on our taste. Pilsner Urquell’s signature flavour balances sweetness from the triple-decocted malt, and bitterness from our Saaz hops. The thick head of dense wet foam adds smoothness and seals in flavour and aroma. Lager - Helles, 4.6% // Our Twelfth Anniversary is in September and as we've always done since our very first Anniversary in 2015, we brewed a lager to celebrate! This year, we brewed a "Engish Style Helles," which is our take on a German Helles using English ingredients. English Maris Otter malts give this a lightly toasted, bready maltiness, balanced by both a traditional English hop (East Keg Goldings) and a newer English hop (Ernest) providing a fruity and floral hopping.

Festbier, 5.7% // Traditional German-style festbier using all German ingredients including Hallertau Mittelfrüh hops, Pilsner and Munich malt, and our German yeast strain. Brewing in the same style of the beers actually served during Oktoberfest in Munich, Fox Fest is our love letter to the German-style beers that inspired so many breweries like ours.

Our House Pilsner going forward, we retired the color designation from our previous Pils, Yellow Kayak, and now we bring you the new Kayak Pils. Applying lessons learned from all previous lagers we've brewed, we bring you a crisp, easy drinking yet flavorful beer, lovingly and painstakingly thought out and crafted. Spicy and slightly citrusy noble German Hallertau hops blend with the cracker and honey notes from premium German Pilsner malt to create the lager we've been searching for. Prost!

Festbier, 5.2% // Collaboration with Beer on the Wall. Brewed like a traditional English Pale Ale with base malts full of cookie and honey flavors right alongside German specialty malts for a bit of nutty and toasty complexity. Enjoy with a giant pretzel or a spicy curry.

Lager - Smoked, 5.3% // Another collaboration with our pals at Chicago Culinary Kitchen, this golden lager features both German beechwood-smoked malt and malt smoked by hand in CCK’s kitchen in Palatine. The beer is fascinating - your first sips will be smoke forward, with hints of campfire and sweet BBQ tang, but as your palate adjusts, the malty sweetness of the Helles begins to assert itself and balances the smokey vibes.

Festbier, 6.0% // Each year, we partner with a German brewer to create a traditional Oktoberfest, but this modern Festbier breaks the mold. A collaboration with innovative Bavarian brewer, Hoppebräu, our 2026 Oktoberfest is lightly dry-hopped for a hint of floral character, balanced by biscuity flavor thanks to Munich malt. But it won’t last long; this seasonal beer will be gone before you can say prost!

Pilsner - Other, 5% // Stella Artois was first brewed as a Christmas beer in Leuven. It was named Stella from the star of Christmas, and Artois after Sebastian Artois, founder of the brewery. It is brewed to perfection using the original Stella Artois yeast and the celebrated Saaz hops. It is the optimum premium lager, with its full flavour and clean crisp taste.

IPA - Imperial / Double, 8.5% // When Phil, Kyle, Chris, and John made their way to this side of the Hudson River, we spoke about all the good that is happening in the Hudson Valley for Beer. With more and more breweries producing great liquid, the Hudson Valley Region has become a beer Mecca. Linear phase represents the pinpoints between Middletown and Wappingers, both of our respective homes and all of the other spots helping to put the region on the map. Starting off with a base of flaked wheat and flaked oats we used a whirlpool of Citra and Strata before dry-hopping this beer with Citra, Strata, and Galaxy. Linear Phase pours a beautiful creamy bright yellow with an aroma of tropical citrus and grass fields. Flavors of pungent orange, passionfruit, melon, and berry come together in a soft and creamy mouthfeel with our #EQjuice finish with just a touch of bitterness to round things out.

IPA - American, 6% // Longsnapper is a West Coast-style IPA brewed in collaboration with longsnapper Patrick Mannelly, the longest tenured player in Chicago Bear history. We designed a recipe together based on Pat’s favorite beer styles and will be released for the inaugural “Patrick Mannelly Award” given to the outstanding college Longsnapper of the year. The beer has ample base and Vienna malt accented by caramel notes from carastan and Munich malts. Hopped with a trio of traditional northwest hops, Columbus , Cascade and Centennial that create a well-balanced, crushable beer.

Märzen / Marzen, 5.5% // We have a deep appreciation for the traditional German beers that laid the groundwork for what we brew and drink today. Our Oktoberfest is an ode to that tradition. It’s a light-bodied and easy-drinking lager with pleasant caramel notes, making it the perfect beer to ring in the changing of seasons.

Bock - Doppelbock, 6.7% // A beer that has a dominant malty taste. This beer’s origins in a monk’s recipe are reflected in its heartiness. The Pope of Beers, Conrad Seidl, describes it as: “Almost black with a very slight red tone, a sensational, festive foam and truly extraordinary fragrance that at first summons up visions of greaves lard. The first taste is of mild fullness with an accompanying coffee tone, which becomes more dominant with the aftertaste. There is very little of the sweetness that is frequently to be tasted with doppelbock beer.” The Ayinger Celebrator has been ranked among the best beers of the world by the Chicago Testing Institute several times and has won numerous medals.

Brown Ale - American, 5.8% // A smooth, toasty brown ale, Best Brown Ale is a mainstay in our fall & winter lineup. With hints of caramel and cocoa, the malt body has the depth to stand up to cool weather, but does not come across as heavy. This balancing act is aided by the generous use of American hops.

Märzen / Marzen, 5.5% // Crafted as a flavorful session beer, Bell's Octoberfest Beer is perfect for a week-long wedding celebration in Germany or the start of the Michigan autumn. As with Bell's Lager Beer, Octoberfest spends a full six weeks maturing in the fermentation vessels. Unlike its cousin, Octoberfest trades in the assertive hop presence for a focus on a light caramel malt note, lending body without too much sweetness.

Stout - Other, 7.5% // Quiet Contemplation - Stout brewed with cold brew coffee, cinnamon, vanilla ABV: 7.5% A smooth and roasty cup of....beer! Inspired by the iced coffee our head brewer drinks we use locally sourced cold brew coffee for a silky rich coffee profile along side fresh cinnamon and vanilla for a gently spiced stout that is perfect for any season! A beautiful blend of flavors that meld wonderfully with a gentle roasty lighter stout base.

Märzen / Marzen, 5.2% // The echo of a classic—burnished like aged copper, a warm glow marking the season change. Notes and aromas like caramel drizzled, oven-warmed biscuit. Structured, not sweet—like toasted hazelnut. Natural carbonation carries, anchoring tradition. Thoughtful, and unmistakably ours.

Bitter - Session / Ordinary, 4.2%, 500ml // It is, quite simply, a wonderful beer. It is exceedingly pale (21-22 units colour), with just a hint of colour in its cheeks from the dash of crystal malt. It has a massive orange fruit aroma from the challengers, balanced by biscuity malt. Juicy malt and tart hops vie for attention in the mouth while the finish is tart and hoppy but well balanced by creamy malt. The bitterness rating is a substantial 36-38. The tangy fruit lingers on the back of the tongue until it develops a hint of orange liqueur. Malt - Maris Otter pale malt and crystal malt Hops - Challenger

Märzen / Marzen, 5.8% // This is a German-style Märzen characterized by a medium body and light reddish-orange color. Sweet maltiness dominates slightly over a clean hop bitterness. Malt character is light-toasted rather than strongly caramel with bread or biscuit-like malt character present in aroma and flavor. Hop aroma and flavor are low but notable, while fruity esters are absent.

For over 200 years, Bavarians have hosted Oktoberfest in Munich, Germany, and we invite you to hoist some here in Chicago with us. Crafted with traditional German malts and Noble hops, this malty lager will have you donning your liederhösen and singing “ein Prosit der Gemütlichkeit” with the best of them.

Brown Ale - American, 5.3% // Don’t be scared off by dark beers! Toasted chocolate and caramel notes lead the charge in this beer tracing its roots back to 18th century England, but this American style brings a little more hop character to the show. Property rights, powdered wigs, brown ales… just like everything we took from the British, we made it better on this side of the pond.

Red Ale - American Amber / Red, 7.6%, 330ml // Brilliant amber beer. A Trappist: brewed by the monks of Chimay (actually in Scourmont, Belgium) for their fellow French Trappist monks of « l’abbaye du Mont des Cats » in Godewaersvelde, France.

Strong Ale - English, 7.4% // Trappist beers tend to be named after the place in which the monastery is situated. We’ve called ours ‘Tynt Meadow’, to honour the link with the plot of land on which monastic life was refounded here in the Midlands almost two centuries ago. Being part of the great Trappist tradition, we’ve chosen to produce a strong dark ale, but one with a clearly English character. Tynt Meadow is mahogany-coloured, with a subtle, warm red hue, and a lasting beige head. Its aroma carries hints of dark chocolate, liquorice, and rich fruit flavours. The beer is full-bodied, gently balancing the taste of dark chocolate, pepper, and fig. It leaves a warm and dry finish on the palate.

Roasted malt delivers notes of coffee and chocolate married with sweet undertones of vanilla and oak from a three month stay in bourbon barrels.

Unless, of course, they have a dragon…Crimson Keep is aged in bourbon barrels for one month deep within the Dragon’s Milk Cellar. The deep red color is evidence of being battle tested. A smooth, malt-forward flavor profile is highlighted by notes of toffee, stone fruits, and oak that lead to a pleasantly dry finish.

Pumpkin / Yam Beer, 5.6% // Don’t be fooled by mere pumpkin flavor… This is the real McCoy! We use soooo much real pumpkin in our mash that it adds hours to the lauter. But the result is incredible. We season our beer with fresh cinnamon, nutmeg and clove to give this wonderful seasonal beer its uncanny “Pumpkin Pie in a Bottle” taste. This beer continues to be our most popular seasonal offering so we know it won’t last long.

Pumpkin / Yam Beer, 5% // Sure, it’s a pumpkin beer so it tastes a lot like everything else that is pumpkin spiced. But Pumpkin Beer for Cafés gains a sweet, nutty, and earthy twist from cold brewed red rooibos (pronounced roy-bows) tea and vanilla beans in an already chewy base beer heavy in unmalted grain.

Historical Beer - Kottbusser, 5.3% // Just cause it's dark and German doesn't mean it's an alt. Based on the obscure Kottbusser style of beer, this surprisingly dry beer retains all the aroma and nuance of honey (from bees) and molasses (not from bees) creating a perception of sweetness through cool, controlled fermentation. Because we're sweet enough damn it.

Märzen / Marzen, 5.4% // We brewed this German inspired ‘March Lager’ often found at the annual Munich festivities in Illinois, in July, so gesundheit to you, too! Expect a rich, bready, deeply malty beer that’s both creamy and crisp, thanks to our fully attenuative yeast strain and an ambitious mash schedule. Enjoy it in September like they do on the Wiesn!

Rauchbier, 8.0% // Following century old recipes all malts made at the Schlenkerla brewery are dried by wood fire. While for the classic “Aecht Schlenkerla Rauchbier” traditionally beech has been – and still is – used, the malt for “Schlenkerla Oak Smoke” is kilned with oak wood. The resulting Oak Smoke Malt has a smoother and more multi layered smoky note than the intensely aromatic Beech Smoke Malt. The hence complex smokiness in “Schlenkerla Oak Smoke” is paired with the multifaceted bitterness of finest Hallertau aroma hops. With 8% alcohol and amber color it matures for months in the deep brewery cellars underneath Bamberg into a special treat for smoke beer lovers for Christmas.

Lager - Dark, 6.2%, 750ml // Dark lager brewed with southern IL black walnuts, toasted in our oven. Rich and robust with a chocolate malt background, a slightly fruity cherry profile, and a nutty finish.

Barleywine - Other, 15.0% // Continuance is our series of blended Imperial Stouts, Barleywines and other Spirit Barrel-Aged beers. Blend #7 consists of threads which include a new Barleywine recipe where we used pecans in the mash tun and an English Barleywine used in our anniversary blends. These threads rested in oak for 11 to 29 months, before being blended, finished on Thai bananas, maple syrup and cinnamon, and then shared with you.

Belgian Tripel, 10.2% // First brewed back in 2004, Curieux was our initial foray into barrel aging. To make Curieux, we take our Tripel and let it age in bourbon barrels for six-to-eight weeks. Once that time is up, we take the beer out of our cold cellars and blend it back with a portion of fresh Tripel. The resulting rich, golden ale features smooth notes of coconut, vanilla, and a hint of bourbon.

Belgian Strong Dark Ale, 9.0%, 11.2oz // The Chimay Blue Cap, baptized "Grande Reserve" in 750 ml bottles is a dark Trappist beer with a powerful aroma, the complex flavor of which improves across the years. It was first brewed as a Christmas beer by the monks of Scourmont Abbey in 1956.

Belgian Tripel, 8.0%, 330ml // Guldenberg is a high-fermenting, balanced bitter beer. The origin of the name comes from the former Guldenberg-abbey in Wevelgem where monks used to make beer. Also, Wevelgem is the birthplace of one of the brewers. Taste: A full-bodied abbey beer that balances between sweet and bitter. It is dry-hopped with Hallertau Mittelfrüh which results in a unique soft-bitter taste and aroma.

Belgian Strong Golden Ale, 8.5% // Duvel is a natural beer with a subtle bitterness, a refined flavour and a distinctive hop character. The unique brewing process, which takes about 90 days, guarantees a pure character, delicate effervescence and a pleasant sweet taste of alcohol. Apart from pure spring water, which is the main ingredient of beer, barley is the most important raw material. Barley must germinate for five days in the malt house, after which malt remains. The colour of the malt and as a consequence also of the beer is determined by the temperature. Duvel obtains its typical bitterness by adding various varieties of aromatic Slovenian and Czech hops.

Lambic - Gueuze, 5.0% // Girardin Gueuze from Brouwerij Girardin is a lambic of exceptional excellence, the epitome of traditional gueuze, bombarding the palate with slightly lemon-grapefruit tang. Considered by many to be the finest lambic of all.

Wheat Beer - Witbier / Blanche, 4.9% // 500 years of hard work went into making this beer that features the aroma of orange peel, coriander and herbs that the merry monks imported from sunny Curacao. Speaking of which: pouring Hoegaarden is just like letting the sun fall into your glass: light yellow and naturally murky. And the soft foam adds a cloudy finish. And then there’s the soft taste, light and slightly sweet and sour and with subtle citrus notes… ah, just go ahead and taste it instead of reading about it!

Belgian Strong Golden Ale, 8.5% // The allusion to pink elephants and the choice of names is not due to chance. With a particular character, the unique taste results from triple fermentation and the use of three different yeast strains. Sweet, biscuit malt backbone, supported by pleasant warmth and spice, finishes well rounded, floral, and dry. Color and Sight: Pale blond, the fine and regular sparkle creates a nice, stable foam head. Scent: Slightly malty, heavy touch of alcohol, spicy. Taste: A good shot of alcohol ignites in the mouth, as it were, which really warms the tongue and palate. The taste is also characterized by its roundness. The finish is strong, long and dry bitter.

Belgian Blonde, 6.6% // In the fifties, an extraordinary meeting took place that all beer enthusiasts should raise their glass of Leffe to. The abbey’s Father Abbot Nys became acquainted with Albert Lootvoet, a master brewer. Passionate about the future of the brewery, Father Nys was upset to have to witness how, since the unpleasant stay of the French revolutionaries, the brewery had slowly fallen into decline and had eventually had to close its doors in 1809. Such a magnificent place could not be forgotten, he believed, and he vowed to bring the Leffe beer back. Father Nys and the brewer set about the challenge with vigour…and succeeded.

Belgian Strong Golden Ale, 9.0% // Devilishly smooth & Light bodied! This classic dry golden ale is slightly fruity with a subtle earthy hop presence. The bouquet is sweet with a mild spiciness intertwining with a pleasant pineapple character.

Wheat Beer - Witbier / Blanche, 8.2% // P.I.W. is the big brother of our Shepplekofeggan Wit. We doubled the IBU's to balance the alcohol and used a myriad of spices, headlined by a four peppercorn blend, accented with fresh orange peel and coriander. The result is a big, yet light bodied Wit with citrus and pear aromas that finishes clean and peppery.

Pale Ale - Belgian, 6.2% // NOTE: The ABV-value of this beer varies, in the United States 6.9% is used. The Orval’s brewery produces only one beer to sell, a beer with a high fermentation that continues in the bottle. It is 6.2% ABV. This beer is brewed exclusively from spring water, barley malt, hop cones, candy sugar, and yeast. The aroma and the fine taste are due more to the hop cones and the yeast than to the malt that is used. What’s special about Orval’s beer is that hops are added at two different stages of the production process.

Belgian Quadrupel 10.0% // The St.Bernardus Abt 12 is the pride of our stable, the nec plus ultra of our brewery. Abbey ale brewed in the classic 'Quadrupel' style of Belgium's best Abbey Ales. Dark with a full, ivory-colored head. It has a fruity aroma, full of complex flavours and excells because of its long bittersweet finish with a hoppy bite. (10,0% ABV) Worldwide seen as one of the best beers in the world. It's a very balanced beer, with a full-bodied taste and a perfect equilibrium between malty, bitter and sweet. One of the original recipes from the days of license-brewing for the Trappist monks of Westvleteren.

Lambic - Framboise, 6.3%, Season 19|20, Blend No. 72, Bottling date: 01/07/2020 , 375ml // For this Hommage, we blended a kriekenlambik and a frambozenlambik in a forty-sixty proportion and with a final fruit intensity of 529 grams of fruit per litre of Hommage. The weighted average maceration time was five months, and we used both jonge and two-year old lambik from seven barrels and eleven brews. This bottle aged for a year in our warm room before its release. NL 3 Fonteinen Hommage is de trage maceratie van handgeplukte volle frambozen en krieken op traditionele lambik. Ongefilterd. Farmhouse Ale - Saison, 6.5%

Lambic - Gueuze, 7.0% // Traditional blend of young and old lambics. Just as the young larva lives in oak wood for at least 4 years only to fly around as an adult beetle for a few weeks, this lambic undergoes a long wood-aging process before being enjoyed as Gueuze. Fermented, aged, and bottled on the farm.

Farmhouse Ale - Saison, 8.5% // A traditional Belgian-style farmhouse ale, the perfect combination of elements came together in their #7 fermenter. You could call it fate, but they called it Tank 7, and so it is. Beginning with a big surge of fruity aromatics and grapefruit-hoppy notes, the flavor of this complex, straw-colored ale tapers off to a peppery, dry finish.

Lambic - Other, 7.0%, 375ml // Cuvée De Ranke is a mixed fermentation, blended ale. A combination of barrel-aged beer and lambic. 70% Belgium sour ale with 30% lambic. Taste: Full-bodied sour flavour, with notes of oak from oak-aging.

Saison - Blanc, 6.5% // A collaboration with our friends at @afterthoughtbrewing, this is one of two expressions (Blanc and Rouge) exploring saison and wine in harmony. The base begins as a Saison brewed with @sugarcreekmaltco and fermented with the combined mixed cultures of both Duneyrr and Afterthought. After resting for 18+ months in stainless steel, the beer develops layers of rustic saison character with subtle funk and depth. From there, we re-fermented with Finger Lakes Riesling grapes, imparting notes of peach, mango, and delicate stone fruit. A gentle acidity lifts the profile, making it bright, refreshing, and expressive of both the grape and the mixed culture.

Table Beer, 4.5% // Angle Trisector is a 4.5% Scottish table beer brewed with Scotch Common but hopped with Ernest grown by Hukins Hops in Kent. Ernest was bred in the 1950’s (by a guy called Ernest, fantastically) but has an extraordinary intensity of fruit character more typical of very recently developed cultivars.

Farmhouse Ale - Saison, 5.0% // A special blend containing both fresh and wine barrel aged beers for a brightly hoppy yet lightly funky saison.

Farmhouse Ale - Saison, 6.1% // Volume XXX revisits our original pairing of ripe peaches from Mick Klug Farms and a strain of Brettanomyces Bruxellensis known for its characteristics similar to white wine like Chenin Blanc and Pinot Gris. This time around we allowed for much longer contact time with the peaches and extended conditioning once bottles. This extended process time yields a beer that has more depth and complexity to it’s funkiness while remaining delicate and allows for a subtle, quenching acidity to emerge.

Wild Ale - American, 5.1%, 500ml Bottle Barrel-Aged beer refermented with strawberries.

Farmhouse Ale - Saison, 6.5% // When you brew as much as we do, sometimes we get tired of telling the yeast what to do. For Apex Predator Farmhouse Ale, we pitch the yeast cold, turn off the temperature control, and let the yeast do its thing. To our delight, it spat out the sweet scent of juicy fruit wafting from a frothy, white mane. Brewed only with grain and sugar unencumbered by the heat of the kiln, we create a hazy, golden body. Apex Predator gets its teeth from a generous Crystal dry-hopping that completes the dry finish with a fruity bite. Pounce on the opportunity to let it part your lips and you may find yourself at the top of the food chain.

Farmhouse Ale - Saison, 6.5% // Saison Dupont is a world classic beer and the yardstick for one of Belgium’s most important beer styles. It is the most admired AND imitated Saison in the world. A strong, vital yeast is key to full attenuation and thus to the style. Saison Dupont is straw colored with a dense creamy head. The nose is alive, like fresh raised bread, estery with citrus and spice notes. Full-bodied and malty, it sparkles on the palate and finishes with a zesty hop and citrus attack. Incredibly compatible with food!

Farmhouse Ale - Saison, 7.0%. 750ml // For Oude Fermier Vintage 2022, the entire blend rested in Missouri Oak - not neutral, but also not new - lending to a powerful and balanced texture aligning it with what you might expect from a Grand Cru White Burgundy.

Wild Ale - Other, 8.2% // Silhouet is a special blend of wild ales aged for 2 to 5 years in oak barrels, and a rustic saison. 5 year old Hallertau Mittelfrüh hops were used. The outcome is a beautifully balanced beer which marries the complexity of aged, characterful wild ales with the fresh and aromatic qualities of a saison. Tasting notes: poached peaches, apple skin, black pepper, cherry pie and oak.

Sour - Other, 6.4% // In a world that crumbled… Refrigeration ceased. The milk spoiled. The vegetables withered. The pastries went stale. The perishables perished. Even the non-perishables were no longer particularly non-perishable. But one remained. One final can, waiting patiently amidst the swirling dust. A humble vessel containing the food once hailed for its mystical powers. A fruit of legend. A fruit of sorcery. A fruit that could, under the right circumstances and level of abundance, produce music from the human soul. BEANS. Our final DrekkerFest 12 beer is a sour brewed with our pals at Mikerphone, featuring coconut, Cara Cara orange, tangerine and coffee. It may not technically contain literal beans as one may know them. It is the spirit of beans. EVERYTHING DIES. EXCEPT BEANS.

Sour - Other, 5.8% // INCIDENT REPORT #1666: A previously unidentified flavor containment unit discovered behind a deep freezer. The substance appears to be a tropical, creamy sour brewed in collaboration with One Drop Brewing Co. from Australia. Contents include mango, guava, banana and vanilla soft serve. This inventory item has been reviewed and processed for recreational consumption. Designated as “Radioactive Paradise”. Hazard Level: unclear, but the government said it’s probably fine Deliciousness Level: confirmed in triplicate

Sour - Smoothie / Pastry, 6.0% // We have good news and bad news. The bad news: the world is apparently falling apart. The good news: this beer. Our collab with Edinburgh’s Vault City brings together tart, juicy marionberry and plum with pastry cream, vanilla and cinnamon for a rich, jammy, dessert-like sour that’s pretty much the doomsdanish of the apocalypse pantry. Y’know, the sort of thing you’d crack open after scavenging the wasteland for something comforting. So dinnae fash, pal. We found sweet treats! Everything’s fine… ish.

Sour - Fruited, 6.5% // Best Maid Sour Pickle Beer with Mango and Tajin.

Sour - Flanders Red Ale, 7.5% // Raw emmer & einkorn from Meinklang Farm combined with local barley & wheat, hopped with Hallertau Tradition and Saphir, soured with lactobacillus cultures and fermented with a rustic farmhouse yeast. The project started with the idea, how can we combine the farmer and the brewer? We felt together a need to push for the necessary transparency in brewing and create a space where the brewer can connect with the farmer and the grains. Through that, we believe, we can brew a more holistic and complex beer. We also believe that a beer can communicate the information of a place. Deep rooting grains, biodynamically farmed in the lowlands of Austria at the @meinklang_farm. Combined with locally sourced organic ingredients.

Sour - Fruited Gose, 6.5% // We teamed up with our buddies over at Feast City to brew a Gose with Mango & chile spice provided by their friends at Big Mich! The end result is a beautiful lightly tart ale with a rush of Mango, slight saltiness and spice.

Sour - Traditional Gose, 4.7%, 500ml // RITTERGUTS GOSE (11.5°P) is the oldest existing, most authentic Gose in the world. We still brew this unique beer in the old-fashioned, original way, using genuine Gose yeast, coriander and salt. Ritterguts Gose's refreshing characteristics are developed through a secondary lactic fermentation, which produces a round and harmonious acidity. Its rare, classic open fermentation and long, cold maturation make it exceptionally well-balanced, the way a real Gose was meant to be. Gluten-Free, 5.5% // American IPAs are known for their citrusy hop punch, but we cranked up the juice on this one! Brewed with grapefruit and a mysterious hop code named “Experimental Grapefruit”, this IPA is a serious citrus bomb. Lively and bright, bracingly bitter, and eminently refreshing, you’ll wish it grew on trees!

Gluten-Free, 5.5% // A classic NW style IPA, golden in color with complex hop aromas of citrus, mango and pine. Sturdy, yet light bodied with a dry finish. A project beer with The Mountaineers, built on a spirit of wonder and a sense of adventure.

Gluten-Free, 5.0% // We brew our annual pumpkin ale ‘Belgian Style’ with a traditional mix of Fall spices and pumpkin puree, all blending seamlessly with the natural spices and fruity esters brought out from the Belgian yeast. We use mostly sour apples to create a clean, modern take on traditional French cider that pleases even the pickiest of drinkers. Its low tannins make it lighter on the palate while having a more mineral body that makes it a refreshing and bright addition to everything from poolside parties to Paella. Sophisticated and friendly: Like a hip friend that doesn’t make you feel bad about not knowing that one band’s first album. A clean, light "quaffing" cider, but don't put it away it too fast! Alcohol content 6.5% by volume. Available in 750 ml bottle with crown cap or 5-gallon keg. Our Farmhouse recalls the refreshing, low-alcohol "ciderkins" or "small ciders" of centuries past. Cooling in summer, warming in winter, and companionable with most foods.

Mead - Melomel, 15% // Tangerine mead with vanilla and lactose aged in Gran Marnier barrels for 18 months.

Cider - Traditional / Apfelwein, 4.5% // When William Magner set out to make Ireland’s greatest cider in 1935, this is what he came up with. We’ve barely changed it since then, but why would we? Made with 17 different varieties of fallen apple, pressed and then kept in the dark to mature for a couple of years, it is the crispest way to celebrate any moment. Mead - Melomel, 13.0%, 375ml // Generated from strawberries, tart cherries and locally-sourced honey, this delicious, semi-sweet treat pairs perfectly with sessions of binge-worthy TV (like Black Mirror)and…other stuff. Don’t feel awful: stream away!

Mead - Melomel, 12.5%, 375ml // Semi-sweet mead forged of vanilla, 1200lbs of local wild flower honey, 1200lbs of blueberries from Tillman Farms in La Paz, IN. Blueberries contribute fruitiness, acid and tannins, making for a well structured mead whose edges are smoothed over with warming vanilla.

Ingredients • Water, organic apple concentrate, organic cane sugar, malic acid, yeast Samuel Smith’s makes this cider at a small, independent British brewery, the oldest brewery in Yorkshire.

Mead - Cyser, 14.0%, 375ml // Schramm’s Apple Crisp is a spiced cyser and a celebration of Michigan fall days. We utilize locally sourced apple cider and ferment it in small batches with its own yeast. Pleasant notes of cinnamon, nutmeg and a hint of madagascar vanilla bean are added to compliment without overpowering the pure flavor of delicious Michigan apples.
