popcorn chicken, dry brined with five spice, and fried crispy; with aji amarillo caramel & lemon *aji amarillo is a type of pepper--we make the caramel by cooking down tiger's milk (a peruvian sauce that we use in house for ceviche, and make with aji amarillo peppers, citrus, & fresh herbs) until it becomes a sticky glaze perfect for crunchy chicken bites!

(Vegetarian, Gluten Free, Celiac Safe) contains: dairy Arborio rice, fermented with koji, and cooked in parmesan broth, topped with parmesan shoyu. *koji is a spore used in fermentation, most commonly used to start sake or miso. We grow that koji onto the arborio rice, and let it begin to work its magic! Once the rice has fermented, we use it to make risotto, cooked in our parmesan broth, and topped with parmesan shoyu (think soy sauce, but we made it from parmesan rinds!)*

gluten free, celiac safe contains: dairy NO MODIFICATIONS Braised oxtail over a corn cachapa with aged tomatillo, queso oaxaca, & compressed onions. *cachapa is a venezuelan corn pancake–it gets cooked on one side, layered with cheese, and folded in half like an omelette–just the right compliment for all that rich & savory braised oxtail!

We grill it and serve it with funky garlicky butter. Use it to soak up every sip of that curry!
