My Great Uncle Tony was the most interesting person in my young life. Stories from Italy, Florida, California seemed like the most amazing adventure. He would show up at my grandparents in the morning and the whole family would start making fresh pasta. When it was done he would whip up carbonara (I thought it was a breakfast food till I was in my 40’s). His travels would add new things I’d never heard on top of the parm and bacon he would use he would add things like chorizo and avocado. So we take liberties with the classic and leave out the egg yolk, keep the bacon and parm add some chorizo fan an avocado over the top and poached egg
