For the mortadella Favola only selected cuts of pork with a natural pink color are chosen. The incorporated bacon comes only from the neck. This is the highest quality piece of the fatty part of the animal. The addition of acacia honey helps to create a full-bodied taste. But one thing makes this a very special Mortadella: It is sewn by hand into the rind and not pressed in a bladder or plastic wrap.
