Behind the Plate: A Sustainable Seafood Dinner
Featuring Chefs Taichi Kitamura & Jason Wilson For the third year, Taichi Kitamura, chef and owner of Seattle’s Sushi Kappo Tamura, returns to Casia Lodge & Ranch to collaborate with Chef Jason Wilson for a special evening where Japanese tradition, seasonality and sustainably sourced Pacific Northwest seafood come together on the plate. This year, we’re going Behind the Plate. The evening brings curiosity and conversation to the table, exploring where our seafood comes from, why sustainable practices matter and how the choices we make can have an impact. Taichi and Jason will introduce the evening’s menu and share their experience and perspectives on responsible sourcing and sustainability. The four-course dinner will feature sushi and other dishes inspired by Taichi’s Japanese background alongside Jason’s seasonal approach to cooking in the Methow Valley. Over dessert, the conversation continues with an informal Q&A with the chefs. Come hungry. Leave inspired.
