The essential sauce for French Rotisserie Chicken. We make the jus by infusing caramelized chicken skins into a white wine enriched chicken stock. We finish it with whole cloves of roasted garlic and Espelette pepper.

Our version of Chimichurri adds Sorrel, Cornichons, Fresh Thyme & Garlic Confit to give it a distinctive French Flavor.
