Cynara Restaurant & Lounge opened in the fall of 2020, named for the Greek word for artichoke and the ancient ideals it nods to: harmony of body, mind, and spirit, reciprocity, and beauty. A scratch kitchen built around Mediterranean flavors, with French and North African influence, drawn from Pacific Northwest ingredients like wild sockeye salmon and Washington beef, in the heart of downtown Olympia, just steps from the farmers market and Percival Landing.
