Born from a deep passion to share a taste of Hachioji, Tokyo, Hachioji Craft Ramen opened in Little Tokyo in May 2018. While Los Angeles embraced rich tonkotsu ramen, we proudly introduced a distinct style: a lighter, savory broth crafted from chicken stock, harmonized with the unique sweetness of grated onion. Our menu spotlights celebrated soy sauce ramen alongside a refined salt-flavored ramen, each bowl reflecting a heartfelt dedication to this beloved hometown specialty. This is ramen crafted with a different purpose—a lighter, aromatic tribute to the flavors of Hachioji.
