    • Wild King Salmon (1lb)

      King Salmon is, as the name implies, perhaps the most delicious of all the salmon species. Unfortunately, due to habitat loss and overfishing, Wild King Salmon is much less common, and management in much of their range in California either prohibits commercial harvest or severely limits it. On the rare occasion we do bring King Salmon onto our menus, it's from one of the few remaining well-managed fisheries on the West Coast–found in British Columbia.  Tasting notes: King Salmon has a high fat and a correspondingly rich flesh. How they're fished: Wild, troll caught from a healthy and well-managed fishery.  Where they're caught: Caught by small day boats in the waters of British Columbia. Size Choices: 1 lb filet. Its perfect texture and sweet flavor makes it a fan-favorite fish for pretty much any dish–from crudos, to tacos, to fish burgers, and everything in between. Fished using trollers, a series of lures towed slowly behind the boat, this is a more eco-friendly type of fishing that cuts down on bycatch.
