Pad Kra Pao, one of Thailand's most iconic everyday dishes. Pork, chicken or tofu stir-fried with chili, garlic, basil, and a salty-sweet sauce, served beside jasmine rice with a fried egg on top. Break the yolk into the rice before you start. Five levels of spice, from No Heat up to Holy Heat with ghost pepper. Medium is the safe bet. Spicy is where the fun begins. Holy Heat is made with ghost pepper, one of the hottest chilies in the world. Somewhere around minute three you'll start praying to a god you don't believe in. Order a soy milk with it.
