    • Joseph Packard Beaufort Été 2 Year

      Made high in the French Alps from summer alpine-pasture milk, Beaufort is sometimes called the "Prince of Gruyères." The cheese is only made between May and October, from herds grazing on farms above 1,500 meters. Milk is collected each morning and turned into wheels once a day at the local co-op, then aged anywhere from 12 to 24 months. Young wheels lean lactic, while those aged past 18 months develop deeper fruity, almost exotic notes alongside the dense, buttery paste, toasted hazelnut, and dried fruit that make this a great firm cheese choice for any board.

      A semi- hard nutty cow’s milk cheese A great melting cheese from high in the Alps, Morbier is traditionally made from both the milk gathered in the morning and the milk gathered in the evening. The evening cheese was protected from dirt and insects by placing a layer of spruce ash on top of it. The milk from the net morning’s milking is then placed on top, producing the striking horizontal line directly through the middle of the cheese.

      Willamette Valley | Mondeuse Mondeuse is a red grape native to the Savoie in France, but Brianne Day has been making a compelling case for it in Oregon's Willamette Valley. Named for a Greek river god, Achelous comes from Johan Vineyard, a biodynamic site shaped by the ancient Missoula Floods. It’s one of the only known sites in the Willamette Valley that has deposits of granite, with basalt boulders, marine sediment, and volcanic loam. The wine is red and blue fruited, medium-bodied, with sweet botanicals, fine tannins, and a fresh, lively acidity. It’s Mondeuse through and through.

      From a benchmark Rhone Valley producer only in its third generation (young for a producer with such a legacy), known for their "LaLa" wines (incredibly expensive Syrahs whose names all start with La). Their Gigondas is the "quiet storm" among their villages wines, punching well above its weight. The vineyards of Gigondas are planted on hillsides at the foot of Mont Ventoux, directly north-east of the town of Orange in the southern Rhône Valley. The dry, stony slopes produce substantial wines that are deep in color, with flavors of ripe summer fruits and savory herbs.
