The recipe is a closely guarded secret known by only a few monks, comprising 130 different herbs, plants, roots, and spices steeped in alcohol and aged in oak casks.

Several different types of apple are used to make a well-balanced and harmonious calvados. Tart apple varieties will develop the necessary richness of flavor, while sharp apple varieties and some perry pears are added to the Calvados Daron mix in order to give it a fresh, acidic touch to achieve refinement and elegance. Calvados Daron is aged slowly in small, old oak casks. The cellar master, drawing on knowledge handed down from one generation to the next, carries out the highly skilled task of blending Calvados Daron, combining spirits of different ages and from different batches to make a well-balanced,

Brandy Sainte Louise was created at the request of bartenders nationwide who have been searching for a classic, old-world style brandy, with a balanced, fruit-forward flavor profile. In the 19th and 20th centuries, as the Golden Age of Cocktails was gathering steam and bartenders all over the world were authoring the classic compendium we still use today, ugni blanc variety French brandies were world-renowned.

Color: Amber with gold glint Nose: complex and elegant - notes of honey, tilleul, fleur de vigne mixed with fresh fruits like peach, prune, fig and dry almond, pate de coing, with a hint of vanilla. Mouth: very fresh at the beginning, nice balance between the sweetness and the acidity of the pineau. The aromas are persisting with fruity notes.

One of the most classic French aperitifs is a pour of gentiane liqueur on the rocks with a squeeze of lemon. Salers is the oldest gentian liqueur of the Massif Central, birthplace to this style of product. It distinguishes itself with a pure, firm, rustic earthy profile. Unlike its larger rivals, Salers is less sweet and does not add artificial yellow color, revealing a beautiful natural straw color. Enjoy with ice and lemon, lemonade, in the Blond Negroni with gin and Dolin blanc, or as an earthy base note in a variety of cocktails. With the addition of a pinch of salt, Salers takes on herbal, tequila-like flavors.

Byrrh Grand Quinquina is made to the original late-19th century recipe that earned worldwide fame and inspired fifty years of evocative poster art. Byrrh combines a generous, port-like wine and mistelle base with a firm backbone of natural quinine to produce a fruity, refreshing aperitif by itself, with tonic and a twist, or paired with blue cheese. In cocktails, Byrrh mixes well with vodka, gin, cognac, tequila, Irish whiskey, and grapefruit. Byrrh is produced in Thuir, in the heart of French Catalan territory, near the coast and border with Spain.

A true Quinquina Blanc, and unique among aperitif wines. The profile of the Cap Corse Mattei BLANC aperitif wine is defined by its distinctly Corsican components. Its all-mistelle base is of Vermentinu and Muscat Petit Grains, lending a terrific minerality, acidity and floral tones. The local Cedrat (aka citron) adds unique citrus aroma and a silky texture. Since its creation in 1872 by Louis-Napoléon Mattei, Cap Corse Mattei is the oldest and best known aperitif of Corsica. Still today family owned, and all macerations, aging and bottling are done in house.

Chambéryzette is a palate-pleasing aperitif that captures the aromatics, acidity and delectable flavors of wild alpine strawberries. It’s exceptionally versatile and adds a vivid, balanced strawberry profile to drinks like a spritz, vodka soda, Martini, or a wild strawberry Negroni. It stands apart from the simplistic and overbearing sugariness of other French strawberry aperitifs and liqueurs. This specialty of Dolin, first created by Rosalie Dolin in 1902, draws its qualities from strawberries of France’s Auvergne-Rhône-Alpes region on a base of Vermouth de Chambéry.

A smoldering wine of great intensity and persistence, the 2007 Rivesaltes Rancio is marked by notes of torched Seville orange, walnut, chestnut honey and garam masala. Grenache blanc, Grenache gris and Macabeu were co-fermented in tank with native yeasts, then aged up in the rafters for more than a decade in old barrique, without temperature control and with minimal ‘topping up’. Bottled after thirteen years in mid-2022, it can be enjoyed on its own, with a variety of cheeses, with roasted nuts, and desserts including crème brûlée and apple pie. Shelf-stable, it should be served lightly chilled or at cellar temperature.

Strega is a vibrant, golden Italian herbal liqueur made from about 70 herbs and spices, including saffron, mint, and juniper, giving it a complex, sweet, and aromatic flavor. Created in Benevento, Italy, in 1860, its name means "witch," stemming from local folklore, and it's often called "the witch's liqueur". It's enjoyed neat, on the rocks, in cocktails, or used in desserts, and is known for its versatility as a digestif or aperitif.

The marriage of two quintessential Barbadian delicacies: rum and coconuts. Working with local coconut farmers, we spent four years tinkering with recipes until we landed on the perfect process. The husks of the ripe coconuts are cut and dried under the Caribbean sun, then infused in our 100% Barbadian rum, distilled at the Stade’s West Indies Rum Distillery. A true celebration of these two icons of island culture.

Estate-grown whiskey produced by Whiskey Acres Distilling Co. in DeKalb, Illinois, utilizing a rare landrace corn variety originally from southern Mexico. This specialty, limited-release bourbon is known for its earthy and vegetal flavor profile, setting it apart from traditional yellow-dent corn bourbons

Aged at least 5 years, comes from 53 gallon barrels and is 100 proof. Binny’s Beverage Depot describes it as “vanilla drizzled caramel corn that greets the nose with a background of cinnamon and nutty oak. A thick and coating palate highlights the sweet caramel corn and moves towards ripe apples and lightly toasted coconut. The finish is long and soft with sweet red berries fading into peppery spice. A new standard for craft bourbon.” Double Gold winner at the 2021 San Francisco World Spirits Competition.”

The 2020 Chassagne-Montrachet 1er Cru La Maltroie is promising, offering up aromas of pear, crisp green apple, lime zest, freshly baked bread and wet stones. Medium to full-bodied, satiny and elegant, it's fleshy but precise, with lively acids and a long, saline finish

'Les Pezerolles' Pommard 1er Cru Voillot is a fifth-generation property in the historic village of Volnay. This domaine meticulously farms 25-acres of vines parceled among the Burgundian villages of Beaune, Meursault, Pommard, and of course Volnay. The guiding principle here is the sanctity of site, thus vineyard work is emphasized while cellar practices are hands-off. The result is a fabulous range of Pinot Noirs of distinct characters, with exceptional aromatics and deliciously rich yet astonishingly elegant flavors.

The 2017 Domaine René Leclerc Gevrey-Chambertin is a savory, classic Burgundian Pinot Noir from the Côte de Nuits region, often described as elegant and brooding. The 2017 vintage is considered a very good year in Burgundy following the difficult 2016 vintage.

The Chambolle Premier Cru “Aux Échanges” is located just below the village of Chambolle-Musigny. The soil is clay-limestone in nature. This wine is aged in both tank and barrel.
