Our Brioche pullman gets its name from the pan its baked in, a pullman loaf pan, and the special starter it utilizes as its leavening agent. A stiff starter, often referred to as a lievito madre, or "mother yeast" in Italian. It is characterized by a more complex, subtle and slightly sweet taste compared to traditional liquid starters. Paired with organic flour and butter, this loaf makes excellent sandwiches, french toast or enjoyed on its own.
