Overmorrow is a traditional German bock crafted with locally grown, barley malted in the Bull Acitt by our friends at Epiphany Craft Malt. The complex malt bill lends notes of toasted bread, malted milk balls, honey nut cereal, and rich melanoidins to this strong lager. The deep garnet hue and light tan head make this beer as beautiful as it is delicious. Noble hops provide just enough bitterness to balance the malt sweetness, resulting in a truly balanced expression of the traditional bock style that is perfect for a cold winter night. 6.2% ABV

This easy drinking golden lager represents a nuanced approach to craft brewing. Brewed to highlight and celebrate and the flavors of local craft malt rather than to prescribe to a particular set of beer style guidelines, we let the malt guide us in the development of this recipe. Fruited sour ale out of Danville, VA. 5.5% ABV

Lazy Bird captures the essence of what it means to be an American Brown Ale. It pours a mahogany brown with a noticeable lemony yet roasty aroma, which comes from a heavy amount of cascade hops at the end of the boil as well as a generous amount of roasted barley in the mash. This combination of malt and hop intricacy makes for an enjoyable beer year round. 5.5% ABV

Classic German style wheat beer. 50% of this beer is made from wheat grown at Perry Family Farm in Rolesville four miles from the brewery and malted at Epiphany Craft Malt in Durham. Brewed the hard way, this went through five mash steps including two decoctions to get every bit of character these malts have to offer. Naturally carbonated and unfiltered. 5.1% ABV

Originally brewed as a feature beer for Smokejumpers Grill at Disney California Adventure, this beer captures California's juicy agricultural history. This Hazy IPA was built on a base of Pure Idaho, White Wheat, Dextra Pils, Unmalted Wheat, and Flaked Oat malts. It was hopped with Simcoe and El Dorado hops, and finished with white and yellow peaches!

A traditional Belgian-style farmhouse ale, the perfect combination of elements came together in their #7 fermenter. You could call it fate, but they called it Tank 7, and so it is. Beginning with a big surge of fruity aromatics and grapefruit-hoppy notes, the flavor of this complex, straw-colored ale tapers off to a peppery, dry finish.

Bright & Tangy Farmhouse Ale (4.8%) Traditionally brewed by farmers in the Wallonia Valley, saisons were made to sustain farmhands through the summer and harvest seasons. Space Dust: a totally nebular IPA. Great Western premium two-row, combined with c-15 and Dextri-Pils, give this beer a bright and galactic Milky Way hue. Are you crazy for hazy? Our Hazyum hazy IPA blends locally sourced wheat and oats with juicy hops full of tropical flavor. All hail Hazyum! 6.9% ABV

Porter. Consider it the mild-mannered granddaddy of stout. Our version stays true to the classic English style popularized by the Industrial Revolution’s working class. CBS is a bold imperial stout featuring chocolate and coffee that has aged in bourbon barrels with maple syrup. The sweet, but balanced, aromas of maple syrup and chocolate fill the air, while notes of toasted oak and vanilla become more profound with every sip – melding together in what can only be described as a transcendent drinking experience. 11.7% ABV

American-style Pilsners are refreshing and complex blend of clean lager fermentation, sweet grainy flavor, and a solid American hop profile. Postcard Pils is brewed with a touch of flaked maize and US grown Mount Hood hops.

Hardywood Gingerbread Stout, described by BeerAdvocate as “freagin’ Christmas in a bottle,” is an imperial milk stout brewed with vanilla beans, cinnamon, fresh Casselmonte Farm baby ginger and Bearer Farms wildflower honey. Gingerbread Stout is then matured in Virginia bourbon barrels, where it adapts an incredibly mellow character with oak, caramel and bourbon undertones, and emerges 12 weeks later as Bourbon GBS. A festive blend of spice character laces this rich, chocolatey stout, which warms the palate and the soul. 12.2% ABV

A thirst quenching Summer classic, Narragansett Del's Shandy is a collaboration between two iconic Rhode Island brands. The first Del's Frozen Lemonade stand opened in RI in 1948 using an old family recipe brought over from Italy. Our Love Red is the everyday, anytime California red wine we love to make as a showcase of old heritage vines that produce amazing fruit. This year’s Love Red is more dynamic than in past vintages, with a subtle touch of tannin and pleasant structure to pair with food, while remaining light and fresh. The grapes were harvested early to highlight the fruit and preserve their natural acidity. The Carignan and Valdiguié were naturally fermented as a mix of partially destemmed and whole cluster berries and went through partial carbonic maceration in stainless steel tank. In 1975, legendary vintner Josh Jensen founded Calera in the Gabilan Mountains of California's Central Coast. Cavicchioli is a historical brand, crafting high-quality Lambrusco since 1928 from vineyards in Italy's Emilia-Romagna region. The Cuvée Luke is an extra-special wine for our family as it is named for Guy’s eldest grandchild. This wine was inspired by traditions from the Rhône Valley. The three varieties come together seamlessly, expressing stone fruit and floral aromatics, balanced with a distinctive minerality. Since we do this wine in full stainless steel, we do a few days of extra skin contact on the Roussanne to give the really interesting body without needing oak. Roussanne 35% / Viognier 35% / Marsanne 26% / Picpoul 4% Product of California. 13.4% ABV

Grapes are harvested from vines an average of 25 years old. Each variety is vinified on its own. Maceration lasts 10 days in stainless steel tanks at 77° F. After 15 days of malolactic fermentation the wine is blended. Aged three months in a mix of used and new American oak casks. The final wine is bottle aged for a minimum of three months prior to release. Vegan friendly. This dry, medium bodied red wine is delicious and easy to drink, with bright aromatics, supple red fruit flavors, hints of vanilla and a soft, smooth texture with balanced acidity. Gascony is renowned for its Armagnac, but it is equally celebrated for its excellent wines grown on rolling hillsides interspersed with fields of sunflowers and corn. Located in the heart of Southwestern France, Vignobles Duffour is owned by Nicolas Duffour. Glou Glou is a natural Gamay wine made by Jean-Baptiste Duperray, a young artisan producer in Southern Beaujolais. The pigeons refers to the old "pigeonnier" in the back yard of J-B's house. "Glou Glou" refers also to a cool-carbonic macerated natural red win that invites glugging! Product of France. 12.5% ABV

In the hamlet of Le Breuil, deep in the southern Beaujolais and perched above a narrow creek, the Domaine Dupeuble has been running almost continuously since 1512. The name of the domaine has changed just three times in its history, most recently when the last heir, Anna Asmaquer, married Jules Dupeuble in 1919. Anna’s son Paul, and her grand children Ghislaine and Stéphane Dupeuble, manage the domaine. Kermit first met Ghislaine and Stéphane’s father, Damien, for lunch in Paris in the late 1980s, and thus began the annual tradition of blending the KLWM Beaujolais Nouveau. Château de la Durandière stands at the door of the fortified village of Montreuil-Bellay few steps away from Saumur. Antoine Bodet looks after a centure-old family tradition of making "fines bulles" following the most rigorous practices. Made from méthode traditionnelle and aged for 12 months "sur lattes" in the ancient tuffeau caves, this dry but rounded wine is showing flavors of raspberry and a lot of freshness. Eberle Winery was founded in 1979 and is family-owned, producing handcrafted, award-winning wines from Paso Robles. Eberle is a name of German descent, meaning "small boar" and has served as the winery's symbol since its inception. Product of California. 13.9% ABV

Less and less present in the Alsatian vineyard, Sylvaner nevertheless reveals, when worked with care and with low yields, its full potential: a beautiful concentration, a refreshing liveliness and a mineral expression faithful to our granite soils. Our oldest Sylvaner plots were planted in the 1960s in Niedermorschwihr. Thanks to their deep roots, these vines now produce small yields of grapes with a rich aroma, reflecting a natural balance between soil, climate, and time. Beatrice and Pascal Lambert's family has been growing grapes for 4 generations in the village of "Cravant les Coteaux", heart of the Chinon Appellation. Bree and Chad Stock are blazing trails and making a name for themselves in the Willamette. I first learned about Chad when he took over as winemaker at David Hill (another favorite Oregon winery), though he consults for many projects. They founded Ltd.+ with an aim to nurture the diversity of varietals that thrive in Oregon. Playing off what grows well now and what will adapt as our planet warms seems to be a particular aim. The fruit was hand-harvested in early October, destemmed, and foot tread before being pressed. The majority of the juice was fermented in stainless steel tanks, the balance in neutral oak puncheon where they remained (no battonage) for 6 months before racking. A gentle cross-flow filtration was performed prior to bottling. Product of California. 12.5% ABV

The old vine, dry-farmed, head-trained Carignan (88%) and Valdiguie (12%) was hand-harvested in early October. Multiple fermentation methods were employed (whole cluster + true carbonic). Masciarelli Montepulciano d’Abruzzo sets the global standard for the grape, offering both iconic quality and everyday accessibility. Nevio represents the time-honored winemaking techniques of central Italy's Abruzzo region. Native, old-vine Montepulciano d'Abruzzo is grown and vinified according to local traditions, which bring out the grapes' full richness, and an intense, deep color. This wine is full-bodied with concentrated flavors of dark cherry, plum and cassis. Nevio was inspired by the internation symbol of Abruzzo: 'The Warriod of Capestrano', a stone sculpture of Vestino Prince Nevio Pompuledio from the VI Centurey B.C. that is on display at the National Archaeological Museum Villa Frigerj in Chieti. The "cono" number 4 was traditionally the oak tank where the coupage of the best young wines from the winery was made. This wine has the richness and power of an aromatic Mediterranean wine and its roundness and balance are achived during months in our traditional oak conical tanks. Intense ruby ​​red color, scent along with marked hints of ripe fruit, soft tannins that give it that elegance that characterizes this variety; it is full in the mouth, good acidity and fruit, round and full of character. Fiulot is ruby red with purple hues. The nose offers intense fruity aromas with notes of blackberries, blueberries and plums and a hint of sweet spices. Cava Pupitre is located in the Comtats de Barcelona area, a land of diverse landscapes, mainly composed of pretty valleys nestling in between low- lying mountain ranges. Our vineyards are situated in different subregions of Comtats de Barcelona. That allows planting each grape variety in the most suitable conditions to get the best possible result. Inspired by the traditional way of making cava. Cava Pupitre symbolizes the 100-year-old way of making this beverage and, in particular, one of the most meaningful parts of the process. The “pupitre” is a structure where the bottles are placed to facilitate riddling. In the “pupitres”, the cava remains in contact with the yeast, thereby contributing to its unique aroma and creamy finish. Our Stillman St. Chardonnay is versatile, pairing well with a variety of culinary preparations. This Chardonnay has been hand crafted (less than 3000 cases produced) from two vineyards. The Andrew's Vineyard (70%), a family farm founded in 1963. This year we introduce from the Chevalier Family the Ghianda Rose Vineyard (30%) into the Stillman St. cepage. Our wine is complex offering enticing flavors such as pear, green apple, and citrus that are complimented by a refreshing minerality. Stillman St. Chardonnay is 100%-barrel fermented in high quality neutral French Oak barrels and aged for 8 months offering complexity on the palate with rich texture for 8 months offering complexity on the palate with rich texture and body without the pronounced Oak and Butter flavors allowing the character of the Chardonnay grape to shine through with a crisp finish. This Italian Pinot Grigio comes from Friuli Colli Orientali, which is widely recognized as one of the best regions for this varietal in the world. Each variety and parcel were harvested separately and directly pressed upon arrival in the cellar. The juice undergoes 2 days of cold settling, then is racked off the gross lees into stainless steel tanks for fermentation. After the completion of alcoholic fermentation, a dose of sulfur was added to the wine to block malolactic fermentation. The components were aged separately for 2 months in stainless steel tanks, then blended and transferred back to stainless steel tanks to await bottling. 2 weeks prior to bottling the wine undergoes a light filtration and another dose of sulfur was added. Sauvignon Blanc 70% / Grenache Blanc 30% Product of France. 12.5% ABV

Andechser Hell, brewed using the traditional multiple mashing process, has an appealing luminous straw yellow colour and bright, clear appearance. 4.8% ABV

The world-famous Bockbier from the Holy Mountain in Bavaria wants to be savoured rather than downed. Andechser Doppelbock Dunkel stands firm as a rock upon the table, its colour reminiscent of dark copper with hints of fiery red. Its bright, clear appearance harmonises with a firm, fine-pored foam. 7.1% ABV

Overmorrow is a traditional German bock crafted with locally grown, barley malted in the Bull Acitt by our friends at Epiphany Craft Malt. The complex malt bill lends notes of toasted bread, malted milk balls, honey nut cereal, and rich melanoidins to this strong lager. The deep garnet hue and light tan head make this beer as beautiful as it is delicious. Noble hops provide just enough bitterness to balance the malt sweetness, resulting in a truly balanced expression of the traditional bock style that is perfect for a cold winter night. 6.2% ABV

Brewed in collaboration with our friends at Proximity Brewing, Proxima Centauri is a dark lager with notes of toasted pumpernickel, milk chocolate, and a hint of caramel. Locally malted, North Carolina grown Seashore Black Rye lends a smooth mouthfeel to this highly approachable dark lager. 5.2% ABV

Originally brewed as a feature beer for Smokejumpers Grill at Disney California Adventure, this beer captures California's juicy agricultural history. This Hazy IPA was built on a base of Pure Idaho, White Wheat, Dextra Pils, Unmalted Wheat, and Flaked Oat malts. It was hopped with Simcoe and El Dorado hops, and finished with white and yellow peaches!

A traditional Belgian-style farmhouse ale, the perfect combination of elements came together in their #7 fermenter. You could call it fate, but they called it Tank 7, and so it is. Beginning with a big surge of fruity aromatics and grapefruit-hoppy notes, the flavor of this complex, straw-colored ale tapers off to a peppery, dry finish.

What is giardiniera? (pronounced Jar-Dee-Naira) Giardiniera is a mix of pickled vegetables originating in Italy. These pickled vegetables (including carrots, cauliflower, celery, and peppers) tend to be on the large side and can often be found as part of a charcuterie board. Chicago style giardiniera on the other hand, consists of much smaller diced vegetables in a vinegar and oil marinade. The first batch of Wiebesaucin Thai Chili Garlic sauce was made in the summer of 2016 while living in Asheville, NC. From there I went to go study Culinary Arts and began my career in the food service Industry working in some of the best restaurants North Carolina has to offer. During my seven years of working in Kitchens I kept perfecting my sauce with the hopes of creating a business. After putting down my chef knife in 2024 I decided it was time to make my dream a reality and start producing sauce full time.
