      Chickpea flour-coated fried potato slices, served with tamarind chutney & chili tomato chutney | vegan, gf "In Kenya, family and I would eat bhajias both as an on-the-go snack and as a sit-down dish meant to be shared. I remember finding them often in Arabic communities, where the sound of prayers playing through loudspeakers created a peaceful, almost holy atmosphere. A dish with Indian origins, bhajias always feels like a dish meant to bring people together."

Mangoes were something we could simply pick from the trees and eat, and avocados were a part of our everyday lives. The avocados we grew and ate were sometimes as large as my head, with a richness and creaminess that made them feel like a meal in themselves."

At first, I found this dish incredibly frustrating because somehow it always ended up on my plate. Looking back, though, I understand what my stepmother was trying to teach us: that the food we ate is medicine. This dish reminds me of the moment I began to recognize just how deeply health-conscious my environment had made me, something I am now incredibly grateful for."

I loved knowing that at the end of our walks, we'd be rewarded with delicious food. My father is in Kenya now, where he owns a restaurant. He blessed us with this recipe for my menu. He explained the steps in a voice note, which we transcribed to create the dish."

      Stew of pumpkin, beets, carrot, celery in coconut milk, served with coconut jasmine rice | vegan, gf "Ital the dishes I can picture most vividly. The name comes from the word vital, and I think of it as "everything stew". Pumpkin, celery and thyme are often essential ingredients, but it’s a dish made with what is around, but always prepared and layered with a lot of intention. My father sent me his recipe via voice note. I remember eating it out of coconut shells on the beaches of Antigua, surrounded by my family and completely at peace. Growing our own produce was an important part of our lives, and by the end of the week or month, we often had leftover vegetables that could be gathered together and given a new life in a single clay pot. That is what makes Ital so special to me. Although it is an “everything stew,” it is also a family stew—a collection of what we had, transformed into something nourishing and shared. Best served in the company of the people you love."

    Mera Kitchen Collective is building a worker cooperative in Baltimore, serving story-worthy food from chefs from around the world. We offer take out, catering and host special events. We've provided over 170,000 free meals (and counting) for our Baltimore neighbors in response to COVID-19. Our name comes from the Greek word meraki, which refers to the act of doing something with so much passion you leave a piece of yourself in it. We hope you taste that when you enjoy our food!
