The Bistro houses the program's capstone course, Restaurant Operations, during the spring semesters, as well as a dynamic, one day multifaceted lunch operations class in the fall semesters. The Bistro offers full - service and cafeteria-style lunch each semester. Senior-level students plan and operate the Bistro.
