Going Whole Hog: What are the parts of the pig the Chef likes to prepare? (Hint: it’s all of them!) We will show you how to use three specific parts of the pig: the belly, the loin, and the shoulder. Learn how each offers its own delicious preparations. Sausage Making: From links to patties to a fine French terrine, Chef Vincent will tell you the secrets of how make a moist, flavorful sausage with great texture and flavor. We will grind and stuff sausages and make pâté (it’s sausage too!) We offer special cooking class experiences on our off-season. April-June. See "Experiences" for details. Only 3 experiences show up at a time unless you choose "VIEW ALL" to the right of the page. Every day, we have a different menu to offer you. Based on the seasons and our farm. Community tables make it more like a dinner party than a restaurant. All of our dining experiences are community style, and we serve a maximum of 44 guests a night. Our dinners last approximately 3 hours from start to finish, with seating starting at 5:50 pm. Please plan ahead for the ferry ride from the mainland. They may have a delay. Also, we are not a good fit for small children. We do not publish a menu in advance, allowing us to feed you the very best of what's harvested on our farm that week—and we hope you will consider it an opportunity to be surprised and delighted! Our dinner menus always contain dairy, gluten, and locally sourced meat, fish, and shellfish. We make our own bread and pasta. We will do our best to not cross contaminate flour but, we cannot guarantee it. We are not able to accommodate diners who are vegan, have an allium allergy or have more than one of the following restrictions: dairy free, gluten free, or vegetarian. with proper notice we are able to accommodate most other dietary restrictions and allergies.
