Chef Chason Spencer and Chef François Castro both spent part of their early careers with the Orsay Restaurant Group, where they learned the value of teamwork, leadership, and the friendships that define great kitchens. Joining them is Chef Maria La Mota of Chancho King, whose Ecuadorian heritage, talent, and creativity have helped shape the restaurant alongside Chason and their team. Together, Chason, Maria, and François have earned national recognition as 2026 James Beard Award finalists for Best Chef: South—a first for Jacksonville and a milestone that has helped shine a national spotlight on the city’s growing culinary scene.
