Learn how to make one of the world’s most powerful and versatile foods from scratch. In this hands on workshop, you’ll craft your own batch of black bean miso while learning the fundamentals of fermentation, miso’s rich history, and why it’s considered such a nutritional powerhouse. Each student will leave with a quart jar of miso to ferment at home over the next 10 months, along with the knowledge to confidently continue the practice on your own. We’ll close by sharing a small meal featuring several dishes made with miso, giving you a clear sense of how easily it can transform everyday cooking far beyond soup.
