Cooked to Order - Our limited run of 48 hour marinated heritage pork skirt steak blanketed with a savory blend of 3 cheeses, our one of a kind dona rojo salsa, and topped off with a cilantro & onion mixture...all that in between our home made four tortillas crisped to satisfaction. Served with taste of our escabeche, a dollop of guacamole, and a seasoned jalapeno.

Cooked to Order - We start with a mound of Colonial nixtamalized corn tortilla chips, then layer on our blissful slow marinated heritage pork skirt steak, our famous white queso, creamy garlic whipped pinto beans, our one of a kind dona rojo salsa, smooth jalapeno crema, escabeche, tangy pico de gallo, a cilantro & onion mixture & then finish it strong with pickled jalapenos.

Prime lamb steak flash seared to perfection, then put on a nixtamalized corn tortilla, we add cilantro & onion mix, then finish it off with a dollop of our tasty home made guacamole. Its a simple taco...but the result is anything but simple. You get a full on umami flavor bomb of prime lamb done right. Limited Quantities, so get it while before they sell out!
