      An entrée of these fantastic maitake mushrooms (aka hen of the woods) from Mycopia in Scottville, MI (near Ludington) are available to us year round! Certified organic and kosher, we take these wonderful mushrooms and cook them with buttermilk and seasoned flour, just as we do the Fried chicken (the dish contains no chicken FYI).       Idaho Russet Potatoes purposely with a few of the skins left on, and hand mashed for that homemade feel. Made simply with milk, butter and salt, these delicious mashed potatoes are made twice daily and cooked for perfection. Fried chicken mashed potatoes standardly come with chicken gravy on top.     • Bacon-Braised Collard Greens (GF)

      Southern style leafy collard greens braised in bacon, ham hocks, bay leaves, black pepper, thyme, salt, onion, oregano, and water. Stewed together for 4-6 hours, these collards produce a wonderful broth known as “Potlikker”. Potlikker, as Ari calls it “The Chicken Soup of the South” has tons of antioxidants. This broth becomes the base to the “Creole Potlikker Fish Stew” entree on our menu. (Contains Onion and Allium)

    • Anson Mills' Soft Grits

      Anson Mills’ South Carolina grits made from Carolina Gourdseed (an older variety bred to ripen on the stalk for maximum flavor). The “germ” (which is where all the flavor is) is left intact through the milling process, the corn is protected by never letting it get above 58 degrees radically enhancing the flavor. Served topped with shredded Cabot Vermont Cheddar (or can have the cheese left off aka plain grits). Grits initially cooked with butter. (Contains Dairy, Corn)
