The combination of grilled chorizo sausage and chimichurri is wildly popular in Argentina for good reason: Huge flavor. We're making them with local sausage from Walden Meats, our own chimichurri and sourdough rolls, and crisp lacto-fermenented cabbage that happens to be as healthy as it is delicious. The COB (cheese on the bottom) is back this week. COB is a Sicilian-American style of pizza popularized by L&B Spumoni Gardens in Brooklyn in the late thirties. It’s pretty much what it sounds like: dough/cheese/sauce, rather than dough/sauce/cheese. The advantage is that the layer of cheese protects the crust from the moisture of the sauce. That results in better contrast between sauce and dough. The structure also highlights the creaminess of the mozzarella and the freshness of our house tomato sauce.
