Reading Raclette
Reading Raclette is a semi-firm wheel of cows' milk cheese that is washed with saltwater brine as it matures. Texture is soft and supple, with heady flavors that leant toward fruity and milky notes. Malvarosa
Malvarosa is a relative newcomer to the scene. Its production began as a way to save a nearly-extinct breed of sheep, but now its raison d'etre is simply deliciousness. It's firm, buttery, rich, and sweet, with a nearly butterscotch-like finish. The unique shape comes from aging in a knotted cheesecloth. Pasteurized sheep's milk from Spain.$6.00+

Montgomery's Cheddar
Montgomery’s is a benchmark English farmstead cheddar, an ultra-traditional version of a style of cheese that’s ubiquitous enough that it can seem un-special. But there’s a reason cheddar hit the big time, and going back to the source code with Montgomery’s (Monty’s if you’re a true cheese nerd) can help you understand. Third-generation cheesemaker Jamie Montgomery uses the same starter cultures as his mother before him and his grandfather before her. The cultures are difficult to handle and can be unpredictable in their results, but they’re credited with producing an incredible symphony of flavors: rich, meaty and robust with sweet, nearly caramelized fruit notes.
