Our Schweinshaxe takes no less than 4 days from start to finish. We start with a 3 lb Pork Shank and brine it for 4-7 days. Once they soak in all that flavor it is slow roasted for 6-8 hours before frying the outside creating a crispy flavorful crust. Served with your choice of two sides.
