Farmhouse Ale - Saison, 6.1% // Volume XXIX features freshly picked apricots from our friends Mick Klug Farms with a strain of Brettanomyces Bruxellensis that is known for the white wine and SweeTarts aromas it creates. This combination yields aromas of fleshy apricots, Fruit Loops, honeysuckle, wet hay, and lime Sprees. The flavor and body are reminiscent of Pinot Gris with a pleasant acidity and a touch of minerality on the finish.

Farmhouse Ale - Saison, 5.3% // Saison brewed with spelt and triticale.

IPA - Triple New England / Hazy, 10.2% // Galaxy & Citra hopped hazy Triple IPA.

Sour - Fruited, 7.8% // Thick, juicy, and fruit-forward—this smoothie-style sour bursts with tangy pineapple, ripe mango, and lush guava. Tropical and pulpy with a rich, velvety pour, Double Nectar is built for the fridge, not the cellar.

Hard Seltzer, 5% // Smoothie-style hard seltzer with guava, coconut, pineapple + orange

Wheat Beer - American Pale Wheat 5.0% // Classic American wheat, Chico yeast, a whisper of Citra in the whirlpool. Soft citrus on the nose, clean and dry on the finish — the kind of beer that doesn't need to explain itself. Built to drink, built to share. Enjoy it with any outdoor activity or your favorite meal, this one goes with everything.

IPA - American, 6.5% // A blend of midwest malted barley with a heavy focus on orange pulpy Simcoe with support from lemony centennial and a little bit of tropical forward citra in the kettle. Straw colored, with just enough sweetness to balance the bitterness.

IPA - Imperial / Double New England / Hazy, 7.5% // We partnered up with our fellow midwest brewery friends, Eagle Park, to create Midwest Sound. Krush, Galaxy, Nelson, Nelson Abstrax, and Citra Abstrax bringing the tangerine, mango, and passion fruit, all wrapped in a soft, juicy body. 7.5% ABV

IPA - Imperial / Double New England / Hazy, 8% // Silt is a New England-Style Double IPA brewed with boatloads of Galaxy and Citra hops. Notes of peach, citrus, and tropical fruit. This is the DIPA we always dreamed of brewing.

IPA - American, 7.2% // Modern West Coast IPA brewed with the righteous folks at Solemn Oath Brewery. Hopped with Zumo, Strata, Krush, and Simcoe hops. When we get together with the SOB crew, it's a bit like a John Hughes film. Most of our collab names are pulled from quotes from his vast catalog of killer hits.

This completely crushable German Style Helles is being released today on opening day! Aromas of fresh baked bread, pepper and flower rise through the fluffy head of foam. Sweet, malty flavors bubble up with the carbonation and finish with a soft mouthfeel.

Stout - Imperial / Double, 12.0% // Imperial Stout with Cocoa Nibs, Vanilla Beans, Cinnamon Sticks & Ancho Chilis. For this release of Ambiente, we blended Mexican Vanilla Beans, Cocoa Nibs from Ghana, Fresh Ground Cinnamon and Mulato Chiles into our Vibes recipe of a Missouri Imperial Stout. We bottled this in late 2025 and have allowed it some time to meld and mellow before sharing with you.

Cider - Dry, 5.4% // Feels Like Home is a fruity and unfiltered cider aged on rum soaked oak. Perfect for late night bonfires.

While Jeppson's Malort may not be easy to find across the US, it is a staple here in Chicago! This wormwood-based spirit was developed by Swedish immigrant Carl Jeppson, who drew inspiration from Bäsk, or bitter, liquor. After decades of production in Chicago, it left the city in the mid-70's to be distilled elsewhere, until CH Distillery brought it back in 2018! We've been cask conditioning coffee in Malort for some time now, and are always excited when we work with CH Distillery on barrel aging too! These unroasted Guatemalan beans were aged for months in these Malort barrels, taking on the character of the wood and the spirit. Barrels are unique in that they are always changing and evolving in flavor profile, with each barrel being truly one of a kind! Sour - Smoothie / Pastry, 6.2% // Beach Dream Braaaaaaaains is stuffed with peach, pear, and passionfruit and we hit it with our double secret smoothie treatment of sea salt, lactose, and vanilla, of course. It’s tropical and delicious whether you’re actually on a beach or just dreaming about it like us.

Sour - Smoothie / Pastry, 6.5% // OH LAWD HE COMIN! Our newest Chonk Sundae Sour is absolutely dripping with blueberries & white chocolate and packs that absurdly decadently sweet, tart, rich chonky flavor you've come to expect and love from our favorite hefty boi!

Sour - Fruited, 6.0% // Fluff Stuff leans in hard on the crazy delicious combination of fruit and mallows and gives us a home for all the fluffy beers we want to make. This Fluff Stuff is STUFFED with passionfruit and sweet & fluffy mallows for a perfect flavor combo we can’t wait for you guys to try!

IPA - New England / Hazy, 6.8% // Our pals at More Brewing Co. kicked down the door and skipped the formalities with this brand new collab IPA. Don't Save Any Cages is brewed with Riwaka, Simcoe Cryo, Erebus, HBC 630 Cryo and Comet. With waves of golden pineapple, grapefruit and stone fruit with a soft lemon-lime to round it out, it's big, bold and not here to negotiate. These flavors aren't getting locked up anytime soon!

IPA - English, 6.2% // Our original flagship beer. Our IPA is a classic American take on the original IPA’s from Burton-upon-Trent. Built on a base of Golden Promise malt and just a touch of Crystal malt. We then layer in the classic American C-hops: Columbus, Centennial & Cascade. Blending new & old world together to create an IPA our Fathers would be proud of. Light biscuit & toffee from the malts meld well with the citrus pith, evergreen & orange from the hops. Solid bitterness overpowers the touch of malt sweetness and finishes dry.

IPA - Imperial / Double, 8.0% // An old-school, clear West Coast style Double IPA with a heavy presence of Simcoe supported by Centennial & Mosaic. Layered with flavors of Pine and stonefruit. Reminiscent of the original Double Daisy Cutter, for those of you who ever got your hands on that back in the day.

IPA - American, 6.7% // A collaboration with Allagash Brewing. A beer with modern fun hops, Krush, Amarillo, Tangier, supported by Simcoe that give the beer a fruit punch and orange kick; as well as soft bread flavor from the use of the Maine-grown wheat that Allagash uses in Allgash wheat.

If we didn’t already cut the legs off our pants they’d blow off from this juicy pale ale!

Lager - Amber / Red, 5.5% // Beer for Kicks is the perfect pitch side companion from the opening whistle to the final penalty kick. Sessionable yet crushable with a noble, turfy hop profile that balances a malt presence whose nuttiness is only outdone by a gang of hooligans. We added some nuance to the well attenuated 'international' style lager by adding demerara turbinado sugar which provides a toffee and honey note.

IPA - American, 6.0% // Mosaic, Cryo Simcoe, & Cryo Columbus hopped IPA. Collab with Billy Goat Tavern.

Shandy / Radler, 2.5% // Naturally cloudy grapefruit flavoring meets our tasty Münchner Lager. Whether in the beer garden, hiking or on the go in the city - this tangy, thirst quencher is the perfect accompaniment: fruity-tart, 100% natural and not too sweet.

Lager - Helles, 4.9% // Our Original Munich Lager is a true classic with its clear and bright gold sparkling hue, crowned by a pure white head. A beer which always goes down well: mild, elegant malts, with a hint of sweetness and a soft hint of hops in the background. This Munich beer is ideal to accompany spare ribs and spicy dishes. Our Stammtisch was brewed to celebrate this idea of community and socializing. It’s a traditional German pilsner featuring a blend of Hallertau and Strisselspalt hops, and we think it’s the perfect accompaniment to any friendly gathering. Stout - Imperial / Double Coffee, 9.5% // Péché Mortel (French for "Mortal Sin") is an intensely black and dense beer with very pronounced roasted flavours. Coffee is infused during the brewing process intensifying the bitterness of the beer and giving it a powerful coffee taste. Péché Mortel is brewed to be savored; we invite you to drink it in moderation. The Péché Mortel was born in our Montreal brewpub in October 2001.

Stout - Imperial / Double, 15.1% // This beer was born from a trifecta of wheat malts, brewed with a hefty dose of brown sugar and gracefully aged in high age statement bourbon barrels for 29 months. This behemoth stout was brewed with a mélange of wheat malts contributing a rich and decadent mouthfeel that carries through the entirety of the palate. A hefty addition of brown sugar marries with dark crystal malts for a depth of caramel and toffee notes. This batch was aged in all Heaven Hill casks with the majority being 20 year bourbon barrels, that imbue a hefty, round and slightly funky well-aged spirit character!

Stout - Imperial / Double, 12.0% // Imperial Stout with Cocoa Nibs, Vanilla Beans, Cinnamon Sticks & Ancho Chilis. For this release of Ambiente, we blended Mexican Vanilla Beans, Cocoa Nibs from Ghana, Fresh Ground Cinnamon and Mulato Chiles into our Vibes recipe of a Missouri Imperial Stout. We bottled this in late 2025 and have allowed it some time to meld and mellow before sharing with you.

Belgian Quadrupel, 11.3% // Dominant impressions of latte coffee with powerful chocolate aromas in the nose. The alcohol esters are enveloped with hints of autumn wood, citrus zest (orange, lemon) and freshly baked biscuits. The initial taste is sweetly sinful. Beer and chocolate trapped into one single glass, a liquid milky draught with a backbone of bitter malt. The alcohol warms the throat and, in the finish, you will pick up traces of cloves, citrus, orange and mocha. The heaviest of the Rochefort beers, the 10 is a quadrupel style beer and can be recognized by its blue label.

Wheat Beer - Witbier / Blanche, 5.2% // Allagash White features a refreshing balance of citrus and spice. Wheat, coriander, and Curaçao orange peel round out the flavor of this pale straw-colored, hazy beer.

Belgian Blonde, 8.0% // Imperial Belgian-style white ale with aromas of coriander and orange zest. Finishes smooth and full with a touch of spice and gentle warmth.

Wheat Beer - Witbier, 5.4% // Blue Moon Belgian White, Belgian-style wheat ale, is a refreshing, medium-bodied, unfiltered Belgian-style wheat ale spiced with fresh coriander and orange peel for a uniquely complex taste and an uncommonly smooth finish.

Wheat Beer - Witbier / Blanche, 8.0%

Belgian Quadrupel, 12.2% // Based loosely on the Smokestack Series’ The Sixth Glass, this abbey-style quadrupel is separated into a number of oak bourbon barrels where it ages for varying lengths of time, some for up to three years. Cherries are added to make up for the “angel's share” of beer lost during barrel aging. Selected barrels are then blended for optimum flavor. The resulting beer retains only very subtle cherry characteristics, with toffee and vanilla notes coming to the fore.

Belgian Dubbel, 7% // First sold in 75 cl (25.4 fl.oz.) bottles, it is noted for its copper color and as the first beer brewed by the monks of Chimay in 1862. Topped with a creamy head, it gives off a light, fruity apricot aroma produced by the fermentation. The taste perceived in the mouth is a balance confirming the fruity nuances noticed in the fragrance. Its taste, which imparts a silky sensation to the tongue, is made refreshing by a light touch of bitterness. To the palate, the taster perceives a pleasant astringency which complements the flavor qualities of this beer very harmoniously. This top-fermented Trappist beer, re fermented in the bottle, is not pasteurized.

Belgian Strong Golden Ale, 8.5% // Duvel is a natural beer with a subtle bitterness, a refined flavour and a distinctive hop character. The unique brewing process, which takes about 90 days, guarantees a pure character, delicate effervescence and a pleasant sweet taste of alcohol. Apart from pure spring water, which is the main ingredient of beer, barley is the most important raw material. Barley must germinate for five days in the malt house, after which malt remains. The colour of the malt and as a consequence also of the beer is determined by the temperature. Duvel obtains its typical bitterness by adding various varieties of aromatic Slovenian and Czech hops.

Belgian Strong Dark Ale, 8.5% // Color and Sight: Dark Chocolate Brown with a compact foam, white-yellow, stable and creamy. Odor Touches of caramel, mocca and chocolate. Spices such as licorice and coriander are also present. Taste: Initially a very pleasant sensation in the mouth of alcohol and softness. It is followed by a growing bitterness, which comes partly from hops, but also from roasted malt and chocolate malt. Towards the end, pleasant balance between bitter, sour and sweet notes.

Wheat Beer - Witbier / Blanche, 4.8% // Kasteel Wit is a fresh wheat beer offering an aroma of citrus notes and freshly grated ginger. The taste is superbly balanced between the zesty citrus, spicy ginger and biscuity maltiness. The harmonious blend of sweet, sour and spicy flavors is topped with coriander and lemongrass for a crisp, dry and refreshing finish.

Belgian Blonde, 6.6% // In the fifties, an extraordinary meeting took place that all beer enthusiasts should raise their glass of Leffe to. The abbey’s Father Abbot Nys became acquainted with Albert Lootvoet, a master brewer. Passionate about the future of the brewery, Father Nys was upset to have to witness how, since the unpleasant stay of the French revolutionaries, the brewery had slowly fallen into decline and had eventually had to close its doors in 1809. Such a magnificent place could not be forgotten, he believed, and he vowed to bring the Leffe beer back. Father Nys and the brewer set about the challenge with vigour…and succeeded.

Belgian Quadrupel 10.0% // The St.Bernardus Abt 12 is the pride of our stable, the nec plus ultra of our brewery. Abbey ale brewed in the classic 'Quadrupel' style of Belgium's best Abbey Ales. Dark with a full, ivory-colored head. It has a fruity aroma, full of complex flavours and excells because of its long bittersweet finish with a hoppy bite. (10,0% ABV) Worldwide seen as one of the best beers in the world. It's a very balanced beer, with a full-bodied taste and a perfect equilibrium between malty, bitter and sweet. One of the original recipes from the days of license-brewing for the Trappist monks of Westvleteren.

Belgian Strong Golden Ale, 8.5% // Mischief is a hoppy Belgian-style golden strong ale. This wickedly good golden ale is fiendishly dry-hopped with American hops to add a layer of complexity and mystery to its fruity, dry Belgian-style character. Citrus and resin diabolically combine with ripe melon, pear and slight peppery spice in a precariously effervescent mixture. Enjoy it, but you’ll want to keep an eye out!

Belgian Tripel, 8.7% // Belgian Abbey Ale

Belgian Tripel, 9.0% // The end of the world. The excellence of triple fermentation through a blend of special yeasts gives this malt beverage an exquisitely robust flavor of exceptional refinement.

Belgian Dubbel, 7.0% // Westmalle Dubbel is a dark, reddish-brown Trappist beer with a secondary fermentation in the bottle. The creamy head has the fragrance of special malt and leaves an attractive lace pattern in the glass. The flavour is rich and complex, herby and fruity with a fresh-bitter finish. It is a balanced quality beer with a soft feel in the mouth and a long, dry aftertaste. The Dubbel contains 7% alcohol.

Belgian Tripel, 9.5% // Was first brewed in 1934 and the recipe has not changed since 1956. It is made with pale candy sugar and has a very pale color produced from a mash of light pilsener malts. Styrian Goldings hops are used along with some German varieties and the classic Saaz pilsener hop. After a long secondary fermentation, the Tripel Westmalle is bottled with a dose of sugar and yeast. This beer holds up well in the bottle over time and seems to soften with age.

Farmhouse Ale - Other, 7.5%

Farmhouse Ale - Saison, 7.0% // Brewed with 100% Pilsner malt, French Strisselspalt and Hallertau Blanc hops, and an expressive Belgian yeast strain, this beer is a rustic expression of straw and hat, grass and white grape aromas, while open-fermentation nurtures the notes of bubblegum and black pepper. A bright and dry beer for the new season.

Saison - Blanc, 6.5% // A collaboration with our friends at @afterthoughtbrewing, this is one of two expressions (Blanc and Rouge) exploring saison and wine in harmony. The base begins as a Saison brewed with @sugarcreekmaltco and fermented with the combined mixed cultures of both Duneyrr and Afterthought. After resting for 18+ months in stainless steel, the beer develops layers of rustic saison character with subtle funk and depth. From there, we re-fermented with Finger Lakes Riesling grapes, imparting notes of peach, mango, and delicate stone fruit. A gentle acidity lifts the profile, making it bright, refreshing, and expressive of both the grape and the mixed culture.

The light, refreshing, creamy vanilla finish will excite those fond of Champagne. Originally brewed by Belgian farmers to attract the best farm hands, we were inspired to brew an exceptional ale as inviting as the original Belgian Farmhouse ales. Light and effervescent, we named it for our founder’s granddaughter Sofie.

Table Beer, 3.2% // Bourgeois Daydream is a flower growing through cracks in the concrete. Beautiful and welcomed but unexpected in a world full of hard craggy edges. Notes of kaffir lime leaves, white flowers and lemon balm lead a dry, succinct finish.

Farmhouse Ale - Saison, 6.1% // Volume XXIX features freshly picked apricots from our friends Mick Klug Farms with a strain of Brettanomyces Bruxellensis that is known for the white wine and SweeTarts aromas it creates. This combination yields aromas of fleshy apricots, Fruit Loops, honeysuckle, wet hay, and lime Sprees. The flavor and body are reminiscent of Pinot Gris with a pleasant acidity and a touch of minerality on the finish.

Farmhouse Ale - Saison, 5.3% // Saison brewed with spelt and triticale.

Farmhouse Ale - Saison, 6.5% // When you brew as much as we do, sometimes we get tired of telling the yeast what to do. For Apex Predator Farmhouse Ale, we pitch the yeast cold, turn off the temperature control, and let the yeast do its thing. To our delight, it spat out the sweet scent of juicy fruit wafting from a frothy, white mane. Brewed only with grain and sugar unencumbered by the heat of the kiln, we create a hazy, golden body. Apex Predator gets its teeth from a generous Crystal dry-hopping that completes the dry finish with a fruity bite. Pounce on the opportunity to let it part your lips and you may find yourself at the top of the food chain.

Farmhouse Ale - Saison, 6.5% // Saison Dupont is a world classic beer and the yardstick for one of Belgium’s most important beer styles. It is the most admired AND imitated Saison in the world. A strong, vital yeast is key to full attenuation and thus to the style. Saison Dupont is straw colored with a dense creamy head. The nose is alive, like fresh raised bread, estery with citrus and spice notes. Full-bodied and malty, it sparkles on the palate and finishes with a zesty hop and citrus attack. Incredibly compatible with food!

Brett Beer, 6.0%, 375ml // This beautiful blend of Missouri Farmhouse Pale Ale and Missouri Saison is co-fermented with house cultures and a Brettanomyces blend.

Wild Ale - Other, 6.6%, 750ml // Sprong is a blend of wild ales, aged in oak puncheons (500L) for around 2.5 years, and a barrel fermented and aged saison type of beer. This saison was fermented in a large oak vessel and later transferred to oak barriques (225L) for another 6 months. Prior to blending the two parts together, the saison was slightly dryhopped for another 3 months. We've added a touch of Sicilian sage to the final blend to macerate a few days before bottling.

Sour - Fruited, 5.5% // Bright & effervescent, this magenta colored blackberry sour features a sweet fruity aroma followed by a tart acidity that lingers through the finish.

Sour - Flanders Oud Bruin, 7.1% // Dark Oud Bruin style ale soured in French Oak for just shy of a year.

Sour - Tomato / Vegetable Gose, 4.0% // Tart Pickle Sour with a perfect balance of flavor. DELICIOUS AND REFRESHING.

Sour - Smoothie / Pastry, 6.2% // Beach Dream Braaaaaaaains is stuffed with peach, pear, and passionfruit and we hit it with our double secret smoothie treatment of sea salt, lactose, and vanilla, of course. BrightCider is made with a blend of Newtown Pippin heirloom apples and other Northwest varieties. The Newtown Pippin was the apple which defined the palate of new world ciders. Colonists found this apple so remarkable that Thomas Jefferson himself wrote from France during his travels " they have no apples here to compare with our Newtown Pippin." The BrightCider is fermented cold to slow the fermentation process, retaining the aromatics of this heirloom fruit. The result is our tribute to American heritage cider with a modern Northwest twist.

Jennings crossed Scottish red raspberries and the American 'Aurora' blackberry. Our Tayberry mead is named for Beira, a one-eyed giantess from Scottish mythology. According to legend, Beira is the Queen of Winter and mother of all other gods and goddesses. She built Scotland's mountains, created Loch Ness, drank from the fountain of youth, and commands the weather.
