Akabu 'Gokujo no Kire'
Established in 1896, the Akabu brewery was completely leveled by the Tohoku earthquake in 2011. It was rebuilt with the young toji Ryunosuke Furudate at the helm, and is now considered one of Iwate's finest kuras. ‘Gokujo no Kire’ means the best of the best cut. Cut is coming from its sharpness. In the cut, you will find fresh aromas of pinapple, pear and apple. This junmai daiginjo is made from Yuinoka rice polished down to 35%, and it is brewed slowly in the coldest months of January and February. Made from ginginga rice local to Iwate prefecture milled to 60%, it drinks silky and clean with fruity, floral notes of white peach and citrus alongside a touch of creamy umami. Established in 1896, the original brewery was devastated by the Tohoku earthquake in 2011 and suffered complete destruction. Boken 'Ippo'
In 2005, a unique yeast strain called AA-41 from Kochi Prefecture was sent into space aboard a spacecraft spending 10 days on the ISS orbiting 400 kilometers above Earth, becoming the world’s first “space yeast.” In 2021, that same yeast embarked on another extraordinary journey: a 5-month stay 6,200 meters beneath the ocean surface, enduring pressures of 620 atmospheres. This sake is crafted using that “Space-Deep Sea Yeast,” whose survival odds were one in 300 million, together with Tosa Urara, a premium sake rice grown in Kochi. Named “Bõken Ippo” after their brewer, Mr. Ippo Takagi, whose name means “first step” in Japanese, this sake is both a tribute to his craft and a reflection of Boken's spirit of exploration. Chikurin Fukamari 'Deep Field'
This sake is made by the Marumoto Brewery, founded in 1867 in Okayama Prefecture at the base of the Chikurin mountains. It is an estate-grown sake, using 100% Yamada Nishiki rice grown by the brewers. They grow their rice according to high ecological standards, favoring high quality over high yields. For the same reason Okayama is known for its high-quality rice and produce, it is also perfect for stargazing; called “The Land of Sunshine”, Okayama boasts some of the highest number of clear days in Japan. Fukamari Junmai is made in a unique solera-like aging process developed by 6th generation President and Toji, Niichiro Marumoto. Each bottle is a blend of new and 3-8 years’ aged sake. This process adds incredible depth and flavor to the finished sake. Chiyonosono "Shared Promise"
A commitment from the brewery to make premium sake despite agricultural hardships like those of WWII. Until this sake came along in the 1960’s, all sake had distilled alcohol added to it due to rice shortages and war rationing. After the war, Chiyonosono crafted the first junmai sake (brewed without distilled alcohol nor additives of any kind) and celebrated by sharing it from a large, red lacquered sake cup called a Shuhai. Daimon 'Road to Osaka' Nigori

Hakuto 'Deep Faith'
Founded in the 1540’s, the Tomita Brewery is one of the oldest breweries in Japan and is now managed by the 15 generation of the family, Yasunobu Tomita, who is also the brewmaster. The Tomita’s named their sake Shichi Hon Yari, or “Seven Spearsmen,” after the leaders of the historic Battle of Shizugatake which was fought just outside their town of Kinomoto. Kinmon Akita X3 Amairo
The X3 Amairo is part of a range of sake from the Kinmon Akita Sake Brewery that use triple the usual amount of koji rice in their production. The result is a rich, umami-packed style of sake, but with high acidity giving a balancing freshness. The name “Amairo”, means flaxen, describes the sake’s golden hue in the glass. Nishide '100 Year'
Ishikawa’s 17th century Kutani Yaki porcelain artwork gracing this bottle helps tell the story that this sake has been made with local ingredients only. Discovered 100 years ago, the yeast known as kuratsuki kobo is especially unique as it exists naturally within the brewery itself, and is therefore only found in Nishide’s sakes. Nishide Moromi
Nishide has rescued two white-haired kitties which now live at the brewery. Named Moro and Mi, the cats are referred to collectively as Moromi, the term for sake mash. Moro is known for a calm and gentle demeanor, as well as unique facial features, including a sharp face line and eyes of different colors (yellow on the left and blue on the right). Mi, on the other hand, is known for being smart and responsible, with a round face and blue eyes. The cats have become quite popular at the brewery, with visitors stopping by to see them while enjoying some sake. Ohmine "Winter's Arrival"
Ohmineʼ s Winterʼ s Arrival Cloudy, introduces “assemblage” ‒ brewed with a blend of Omachi, Aiyama and Yamadanishiki. Seikyo 'Omachi' Namazake
Seikyo Namazake is brewed with Omachi rice, characterized by a deeply rich and soft taste as well as a crisp finish. Omachi rice was discovered more than 150 years ago and is the oldest existing sake rice. It is also the only non-crossbreed sake rice that exists in Japan today, with more than 70% of all varieties of sake rice belonging to the Omachi family. Sekkai Ito "Ryujin no Yuzu"
Carefully crafted Japanese sake is the base of this yuzu sake. Ryujin (Dragon God) is a small hamlet in the mountains of Wakayama with 75% of the hamlet is over 1500 Feet in elevation, and is famous for its hotsprings with curative properties. The local lore states that a monk was led to the hotsprings in the mountain to help cure local villagers. The local yuzu citrus is famous for its fragrant aroma, thick juicy skin, and zesty juice from its pulp. It is highly prized by chefs across Japan for pairing with delicate seafood. Shichi hon Yari "Seven Spearsmen"
Founded in the 1540’s, the Tomita Brewery is one of the oldest breweries in Japan and is now managed by the 15 generation of the family, Yasunobu Tomita, who is also the brewmaster. The Tomita’s named their sake Shichi Hon Yari, or “Seven Spearsmen,” after the leaders of the historic Battle of Shizugatake which was fought just outside their town of Kinomoto. Shichi Hon Yari Junmai is the classic representation of the brewery’s style with its traditional and modern dimensions. Earthy and rich aromatics and flavors meet elegance and softness in the finish. Shichi hon Yari 'Ginfubuki'
Founded in the 1540’s, the Tomita Brewery is one of the oldest breweries in Japan and is now managed by the 15th generation of the family, Yasunobu Tomita, who is also the brewmaster. Tomita san is committed to his local area, its history, food, and agriculture. He works with a 6th generation rice-farmer to cultivate sake rice unique to Shiga Prefecture. This sake is made with “Ginfubuki” rice which is a cross between the famous Yamada Nishiki rice and Shiga’s premier local sake rice “Tamazakae”. Ginfubuki was registered by farmers in Shiga prefecture in 1999. Tomita san now works closely with the rice farmers to cultivate and encourage this new variety, celebrating the uniqueness of Shiga prefecture’s sake culture. Tatenokawa 'Nehan'
From the famously daiginjo-only sake brewery comes a new line of sake, employing the recently revived rice “Soubei Wase” , which contributes to the unique flavor of this sake. It took over three years to revive this rice variety which was originally native to the Shonai Region; it is the parent of legendary heirloom rice strain “Kame no O”. This Junmai Ginjo is made from Dewasansan rice, a descendant of the iconic Omachi heirloom strain. Yuki No Bosha
Yuki no Bosha - which translates to cabin in the snow - is named after the cold and snowy region of Akita where the sake is brewed. The brewery gets so engulfed in snow during winter that the fermentation process gets cooled and slowed, resulting in a fermentation process that takes 5-10 times longer than production in other areas. The beautiful aromas in this sake come from a proprietary blend of twelve different yeast strains, some of them derived from fruits like apples and strawberries. The sake itself is filled with contrasting notes of juicy fruit and spicy, mineral complexity. Yuki Otoko "Snow Yeti"
Aoki Shuzo, makers of Kakurei, designed "Yuki Otoko" to be their super-dry brand of sake. For a while, it was so popular in Japan that the annual production sold out too quickly to export! They’ve since scaled up, so it comes to the US in limited amounts. The palate is super fresh and clean, with a crisp edge like sparkling mineral water. Yuri Masamune 'Beautiful Lily'
Produced in Akita by the Saiya Brewery, makers of Yuki No Bosha, this is a favorite among locals of the region. Yuri is the name of the local area of Honjo-shi and Masamune is an old term for Japanese sake. Hakkaisan "Awa" Sparkling
In preparation for the 2020 Tokyo Olympics, Hakkaisan Brewery Company introduced “Awa” Clear Sparkling as an alternative for champagne. Meaning “bubbles” in Japanese, Awa is produced through a secondary fermentation taking place inside the bottle, similar to traditional champagne. After being disgorged, it is perfectly clear, with small bubbles and fine aromas. This sparkler drinks like Champagne, but is much less acidic. Heiwa Shuzo "KID" Junmai Daiginjo
One word sums up this sake: special. This sake is just bursting with so many fresh fruit aromas and flavors. Notes of tropical fruits and flower blossoms abound in the nose. Hitachino Red Rice Ale
From Japan's most prestigious brewery, this red rice ale is brewed with barley, red rice and sake yeast. The brewing process starts with the polishing, washing, soaking and steaming of rice (25% of total grain bill) to break down starches. Afterwards, pilsner malt is added to the mashing process. After lautering, Hallertauer hops are added in the brew kettle.
