Our tamales are literally made in-house. It takes a super long time and are extremely labor intensive. We literally have to schedule extra help on tamal day. We stuff a corn husk with home-made masa and spiced meat (pork or chicken) and steam them by the dozen. We then serve it with red sauce and cheese on top and broil to perfection.
