Italian Pilsner - 5.0% Lemongrass, Dandelions, Flaky Pastry. Only our third Italian pilsner, this one carries the hallmarks of a classic: a doughy, cracker-like malt backbone, a delicate grassy and floral hop flair, with a lickity-crisp, lemon spritz finish. Far from cliché, we deployed experimental hop variety HBC 1134 this time around, elevating this brew to the highest levels of consciousness. It’s easy-drinking but still makes you think, the perfect companion to a great slice of ‘za, or just laying in the grass, wondering why you named your dog after a carb.

Hazy Pale Ale - 5.4% ABV. Mango Milkshake, Cool Whip, Pineapple Lemon Mousse. This ultra-hazy, pastel yellow stunner is our first seasonal pale ale in many moons. Brewed with Simcoe, Nelson Sauvin, Riwaka, and Mosaic HyperBoost, it delivers big waves of tropical fruit with a touch of citrus. It starts off juicy, then settles into a dangerously creamy, smooth finish. Whether you’re sipping it on the patio, the couch, or straight from the taps here at EST, this one hits exactly the way you want it to.

Barrel-Aged Anniversary Blend - 5.7% ABV. Grapefruit Pith, Leather, Rocket Candies We’ve been saying it for years: the beer is the boss. So when this year’s vintage wasn’t ready for our anniversary, we listened. We don’t release anything we aren’t 100% on. As the heart of our barrel program, and named for the original Establishment lost in the 2013 flood, this World Beer Cup Gold Medal winner is a window into our evolution as a brewery. Expect notes of black pepper, sweet citrus, and tropical fruit, carried by a firm bitterness, with a smooth finish of rocket candy and minerality. What started as a dream in the mud is now 7 years strong, and counting!

Barrel-Aged Beer with Strawberries - 5.6% ABV. Nana’s Strawberry Candies, Jam, Garden Party. Close your eyes and imagine this: You're dancing through sun-warmed strawberry fields in the first blush of summer, plucking the ripest, reddest berries straight from the vine. That burst of juicy sweetness? We bottled it and balanced that brightness with a squeeze of lemon, and a whisper of herbaceous intrigue. The result pours a stunning rose gold, like summer caught in a glass. Forget natty wines. This is your new warm-weather ritual, your perfect summer sipper. Bottled: November 2025

Lager Beer - 4.1% ABV. Clean, Crisp, Classic. We get it. Sometimes you just want a beer without all the bells & whistles. This no-nonsense brew is as straightforward as it gets, meticulously crafted to be the ultimate utility player - we thought a lot about this beer so you don’t have to. All year-round, no matter the occasion (or lack thereof), this is the beer for that.

Kölsch-Style Ale - 4.8% ABV. Light, Crisp, Balanced. A refreshingly drinkable combination of doughy pilsner malt, pear esters, and a touch of hops.

Hazy Pale Ale - 5.4% ABV. Tropical, Hazy, Smooth. A style that doesn’t need a lot of introduction these days, our NEPA gets it’s signature tropical flavour and aroma from whirlpool additions and dry-hopping with some of our favourite hops. Tropical and citrus notes, a creamy body, and restrained bitterness. The type of hoppy beer for someone who doesn’t think they like hoppy beers. ⁣

Hazy IPA - 6.5% ABV. Citrus, Juicy, Punchy. Yellow in colour and solid gold in taste, after a few trips around the sun and more than a few attempts, our beloved Sky Rocket sticks the landing! This beer is a beautiful and balanced constellation with zesty, tropical Citra hops as its star.

Blackberry Sour with Vanilla - 5.6% ABV. Berry, Vanilla, Pie Crust. Big blackberry aroma, a moderate tartness that’s balanced by a sweet impression from the vanilla. Notes of pie crust and caramel. Reminiscent of blackberry pie, or blackberry ice-cream.

Table Beer - 2.9% ABV. Lemon, Hay, White Pepper. This lil table beer smells like summer and it tastes like it too. Expect fresh cut lemons, herbs, hay, and field flowers. High fizz factor, and a crisp, dry finish. Best enjoyed all day long.

Mexican Lager - 4.8% ABV.

Alberta Wild Ale with Oranges and Black Tea – 5.1%. Citrus Preserves, Gan Pu’er, Spring Flowers. This wild thing is maybe our most worldly to date, taking its inspiration from a specialty fermented Yunnanese tea called Gan Pu’er, which is made by filling small, hollowed out green tangerines with ripe Pu'er tea leaves, then drying them as one unit. Juicy orange zest dominates the initial palate, with notes of black tea and fresh wheat blossoming as the supporting cast, finishing citrusy with a touch of funk. It ain’t Newtonian mechanics - it’s just an easy-drinking, crowd-pleasing, refreshing winter banger.

Dortmunder Lager - 5.5% ABV. Teddy Grahams, Pralines, Flower Patch. Whereas our regular-rotation German, Pilsgnar, leans into that traditional, crispy hop-forward sensibility, this North German variety—distinguished by its unique water profile—chases depth. A massive variety of character malts gives it a bready complexity, like crusty sourdough drizzled with floral honey, finishing sorta sweet and totally satisfying. Your golden ticket to nostalgia, and lager season, has arrived. Das good, ja!

Blueberry Rose Petal Wild Ale – 4.7% ABV. Sangria, Dried Herbs, Berry Splash Ice Breakers. Get ready to be blown away. Our latest Wild Things release was fermented on second-use blueberries, which give the beer not only its beautiful rusty rose colour, but a bright berry vibe, bringing home the funk in this one of a kind brew. The dried rose petals bring a subtle floral lift to what could be considered Amethyst Realm’s everyday, easy-drinking cousin, and it finishes crisp and spritzy, making it super refreshing.

Pink Lemonade Sour - 4.1%. Country Time Lemonade, Raspberry La Croix, Zesty. We’re proud to partner with local LGBTQI+ event production luminaries The Cabaret Company for a beer celebrating Trans Day of Visibility. This spritzy showstopper is bursting with bright, fresh lemon, layered with delicate fruity and floral notes from raspberry and hibiscus. Perfectly refreshing, tart, and low ABV, without sacrificing any flavour. The ultimate-thirst quencher. We’re toasting community, resilience and, most importantly, joy! Polotmavý Ležák 12° (Czech Amber Lager) - 4.6% ABV. Caramel, Bread Crust, Crisp. Light beer with lots of flavour and body. Surprisingly so for the low ABV. Very well balanced. Designed for drinking in quantity, has an exceptional smooth and soft quality.

Tmavé Speciální Pivo 14° (Czech Dark Lager). Roast, Dark Fruit, Smooth. Bread crust, dark fruit, chocolate, floral Czech Saaz hops, soft water provides a very gentle smooth bitterness impression. Refreshing AF even on a hot day!

Chanterelle Wild Ale – 4.4% Dried Apricots, White Pepper, Earth. Forget everything you think you know about beer and believe the hype. All the hype, including the fact that this is a collaboration with our friends at Horus Aged Ales (@horusagedales) from California. We crammed 12kg of wild chanterelles, both fresh and dried, into this brew. Due to seasonality and the many steps taken to make this beer, there were also several different varieties added, all foraged by Calgary local supplier The Canadian FunGuy (@canadian.funguy). After patiently waiting over a year and a half, the result is pure mushroom magic: a surprisingly fruity sip of ripe apricot, citrus, pepper, and deep earth.

West Coast Pilsner - 4.8% Fruit Rollups, Mandarin Oranges, Easy Breezy. Masterfully balanced between hop-forward and absolutely crushable, we’ve revamped Ocean View for maximum refreshment. Built with the aromatic profile you know and love from the west coast, we brought the ABV down to a crisp, under-5% finish that keeps the glass full. Same view, brighter horizon.

German Pilsner, 5.2% ABV. Floral, crushable, snappy. Bready malts and noble hops ride switch between floral and spicy for a balanced bitterness.

Wheat Fields, Barnyard, Lime This Canadian Brewing Awards gold medal winner is proudly made from 100% Alberta grown ingredients, with malted wheat from the legends at Hogarth and beautifully unique hops that sing songs of foothills terroir from Water Valley Hops.

Orange Wheat Ale - 5.0% Simply Orange, Mimosas, Tropicana. We blitzed an entire grove’s worth of oranges - from zest to pith - to make this sun-kissed adult OJ. This spring seasonal is here for a good time as well as a long time, so imagine the golden days lounging on the patio with this juicy, crisp, dry, and refreshing summer banger. Don’t it feel good?

Robust Porter, 5.8% ABV. Rich, Dark Chocolate, Classic. A rich, chocolatey classic quaff brewed with dark malts which are to credit for its night-sky hue and roasty, toasty coffee notes. Lightening up the darkness are some light citrus and floral elements from the hops that bring with them a subtle, balancing bitterness on the tail end.

Barrel-Aged Anniversary Blend - 6.3% ABV. Orange Pu’er Tea, Apricot Sherbert, Gobstoppers. An ode to both past and present, Erlton St. was home to the original Establishment (a basement laboratory) and is now an annual benchmark for our evolution in barrel-aging beer. An orange & apricot aroma moves into fermented tea, black pepper and ripened fruit when sipped. There’s a firm bitterness that finishes sweet & smooth with a hint of rocket candy, minerality, and aged hop character on the end. This beer spent over 18 months in barrels, then was matured in bottles for over 9 months, resulting in a complex yet approachable wild beer, and a snapshot of EST in 2024. Bottled: June 2024

Barrel Aged Anniversary Blend. 6.6% ABV. Carraway, Black Pepper, Oak. This year's Erlton Street’s having a block party and orange marmalade, cracked caraway, and freshly ground black pepper are invited. Mild acidity is on the menu and you know the playlist is funky. Nuanced, complex, and positively glowing, this is the first of our anniversary addresses that features a blend of 1, 2, and 3 year-old Lambic-inspired beers. This blend of old and young is our nod to the Belgian Gueuze tradition. Bottled: November 2022

Trappist-Style Brett Ale - 6.9% Leather, Bitter Orange Peel, Stone Fruit. A Belgian masterpiece, reborn! This iconic Trappist-style ale, one of our most-requested repeats, is a faithful invocation of the time-honored Monastic tradition. Its creation was a patient two-year journey—and a rare departure for us. We set aside our wild house culture, employing instead a defined blend of microorganisms. The result is a communion of cavernous malt complexity, balanced by an assertive, noble bitterness. Effortlessly drinkable, it glows with a heavenly, golden-orange hue, offering robust, rustic flavors of orchard apple, caramelized malt, and a signature, spiritual funk. Bottled: January 2025

Barrel-Aged Beer w/ Blueberries and Lemon Thyme - 6.8% Mini Blueberry Tarts, Dehydrated Lemons, Garden Herbs. Falling under the spell of the herbaceous aroma and cosmic, vibrant hue, you’re about to embark on a supernatural journey through fruit, funk, lemon thyme, and a tartness that shifts throughout the tasting, changing as the beer warms. We added more herbs to the much beloved first iteration of this brew, enhancing the beer with an increased complexity that will leave you wanting to wander this other dimension. Barrel-Aged Beer w/ Rhubarb - 6.2% ABV. Pie Filling, Rocket Candy, Salt Rock. In a first for The Establishment - customers, friends, and family all brought in stalks from their garden rhubarb in varying varieties and ripeness, resulting in an incredible depth of rhubarb flavour with supporting notes of black pepper, herbal tea, and rocket candy. The initial palate will take you straight to your auntie’s down home prairie rhubarb pie, and with every sip you'll taste the love and energy of our community. Bottled: November 2024

Barrel-Aged Beer w/ Hibiscus - 5.6% ABV. Sweet Berry Wine, Fruit Leather, Tannic. Berrylicious and funk-foward, with a delicate earthiness to balance, this iteration of Potion Approaching is an enhanced version of the previous brew, with more lambic-inspired beer, more hibiscus, and third-use strawberries added to the cauldron. Filled with home-grown ingredients, including Water Valley Hops & 100% Hogarth Malt, this perfectly tart and fruity enchantment will leave you dreaming of the equinox. Barrel-Aged Beer w/ Raspberries - 5.1% ABV. Raspberry Coulis, Bright, Gummy Candies. Every chef knows that when seasonal ingredients speak, you listen. The surprise offer of a fresh raspberry delivery was too good to pass up, so this beer was blended on the fly and in homage to these humble little succulents at their peak. Reminiscent of the award-winning Ruby, My Dear, this brilliantly red, effervescent sipper delivers on the promise of juicy, sweet raspberries plucked fresh from the bush, with a balanced and dry tartness that comes from years of honing our craft. Barrel-Aged Beer with Haskaps and Vanilla Beans - 6.3% ABV. Ambrosia Salad, Cool Whip, Tangy. Inspired by our beloved core beer and born from years of mixed-culture experimentation, this beer is a passion project on every level. Four different barrels were blended and refermented on 300kgs of juicy, AB-grown Haskaps. We then individually hand processed 180 vanilla beans to create this decadent, funky beverage that’s sure to rock your world. Bottled: February 2024

Barrel-Aged Beer with Beets and Strawberries - 5.5% ABV. Strawberry Jelly, Earthy, Schrute Farms. Experimental and playful on the palate, this sipper will convince you that vegetables do, in fact, belong in beer. Two base beers met 300 kg of hand-cut and blended beets to create a charmingly earthy foundation. We then blended in a small amount of our annual strawberry release, which plays an important yet subtle supporting role, providing balanced acidity and a hint of perceived sweetness. Barrel-Aged Beer with Tayberries, Loganberries, Blueberries, and Raspberries - 6.1% ABV. Fruit smoothie, Haribo Berries, Natty Wine. A quartet of whole summer berries ‘jam’ with three different base beers for the debut of our first-ever mixed fruit wild beer. Perfectly matched perceived sweetness and acidity deliver the nostalgia of juice boxes and finish with an ode to dry and funk forward natty wines. Bottled: December 2023

Barrel-Aged Beer with Apricots - 6.5% ABV. Apricot Delight, Juicy, Slate. Three different base beers were blended and re-fermented on ripe, sun-kissed apricots to create an experience that gracefully walks the line between extreme juiciness, tasteful acidity, and gentle hop bitterness. A blend of barrel aged mixed culture golden beers with blueberries and lemon thyme. 6.4% ABV. Blueberry, Lemon, Herbal. The beer smells of blueberry syrup poured directly onto piping hot pancakes with hints of herbal, lemony tart notes from the lemon thyme. The variety of beers blended to create this tasty beverage provides a delicate malt and hop flavor base, allowing the berries to be the star. It has a moderately low level of acidity, high levels of funk, and finishes dry and tart. This beer is a great representation of blueberries with a noticeable but not overpowering contribution from the lemon thyme. Bottled: January 2023

Barrel Aged Beer with Elephant Heart Plums. 6.6% ABV. Stone Fruit, Black Pepper, Amaretto. This beer’s a stunner. We brewed it using four different barrel-aged base beers chosen specifically to give us a rich, malty base with relatively low acidity to balance the tartness of the plums that pigment this potion. Expect a complex blend of black pepper, stone fruit, and a fantastical amount of funk. Bottled: February 2023

Mixed Culture Saison Aged on Second-Use Apricots and Peaches. 6.3% ABV. Stone Fruit, Juicy, Bright. Primary fermented in stainless and aged on second-use fruit, this Mixed Culture Saison is stone fruit-forward with moderately high acidity and a hint of funk. Much like biting into a juicy apricot chased by a sleeve of the rocket candy from your childhood. And that’s first-hand news you can count on. Bottled: August 2022

Mixed Culture Rye Saison Fermented and Aged on Second-Use Nectarines, 6.3% ABV. Fruity, Funk, Slate. This mixed culture beer is unblended and fermented on second-use nectarines. You may be able to smell the stolen thunder (and lightning) since we called on the same fruit we used in Beauty In The Vibrant Form. Giving fruit a second life is a practice that unleashes a perfectly new flavour profile—one higher in overripe funk and lower in acidity. Taste for yourself how much beauty and vibrance they had left lingering for us to love. Bottled: July 2022

Barrel Aged Beer with Hibiscus. 6.7% ABV. Berries, Tannic, Rose. Berry-forward on the nose with an oak and aged hop backing track. The hibiscus adds a touch of tannic tartness to the bouquet, making it mildly reminiscent of a dry wine. But where the flower really powers through is the pigment, embellishing this potion with the colour of cartoon bloodstreams. Bottled: June 2022

Barrel Aged Beer with Raspberries. 5.9% ABV. Raspberry Candies, Bright, Juicy. Ruby spent months in barrels perfecting its pucker and getting its oak on. Then, we hammered it with raspberries to amplify its already-rich colour and flavour. It’ll trickle past your ivories to treat your palate to a harmonious funk and a taste as precious as the gem for which it’s named. Bottled: May 2022

Dry-Hopped Barrel Aged Beer. 6.3% ABV. Tropical, Floral, White Wine. This rousing bouquet of golden sour beers was blended by the women of The Establishment and dry-hopped with the 2021 Pink Boots hop blend. Expect some fruity florals and barely-there tea-like bitterness, but it’s the unexpected rocket candy finale that really brings the house down. Bottled: March 2022

Barrel Aged Beer With Blackberries. 7.4% ABV. Jammy, Toasty, Tart. Jammy blackberry balanced by moderately-low acidity. We chose darker malt forward beers to help balance the dark berry notes. Toast and caramel from the bruin and red sour bases. Funky mixed culture character plays well with the jammy notes of the fruit. Bottled: February 2022

Barrel Aged Beer with Peaches. 6.1% ABV. Peach Juice, Rocket Candy, Funk. We picked a blend of barrels we knew would compliment the delicate Glohaven peaches we brought in from our neighbours to the West and aged the base brew for months before we plopped in the produce to kick the existing cultures up a notch. Bottled: December 2021

Mixed culture sour beer with nectarines, 6.2% ABV. Stone Fruit, Sour Candies, Juicy. This vibrant beauty gets its funk from the lambics in its base, and its rustic charm from the Bretts in the blend. But the overall rhythm stays loose and pumped full of juice thanks to the 350kgs of organic, hand-pitted nectarines from B.C. that we packed it with. Bottled: December 2021

Barrel Aged Beer with Rose Hips. 6.0% ABV. Floral, Funky, Fruity. Put the petal to the palate. The bounty of four of our different house culture barrels came together to harmonize some more before welcoming some rose hips to the mix and mingle before it was ready to pour. It’s got moderate acidity and a firm but fair funkiness that pairs well with the faint floral of the fermented hips. Bottled: October 2021

Barrel Aged Beer With Apricots. 6.0% ABV. Ripe Apricot, Amaretto, Tart. We used 320g of apricot per litre, and it shows—the skin, flesh, and pit all play their part. This golden sour was built to overflow with super complex fruit character in perfect concert with the tart funk notes coming from the oak barrels it was aged in. Bottled: October 2021

Barrel-Aged Beer with Black Currants - 7.8% ABV. Berry fruit, spicy mixed culture character, supporting moderate acidity and a pleasant palate cleansing tannic finish, reminiscent of pinot noir. Skin contact from the Alberta-grown whole fruit adds tannins to the finish of the beer, providing a wine like element. Bottled: April 2021

Barrel Aged Beer with Ginger. 7.1% ABV. Lemon, Spice, Funk. This mixed culture sour is spiced just right with ginger two ways: fresh and cracked. Both forms of this tasty rhizome bring flavours all their own, the former is spicy and intense, the latter is way more baked and mellow. But even together, the ginger has a soft touch so as not to sabotage the frontman: the beer itself. Bottled: March 2021
