In this hands on workshop, you’ll craft your own batch of black bean miso while learning the fundamentals of fermentation, miso’s rich history, and why it’s considered such a nutritional powerhouse. Each student will leave with a quart jar of miso to ferment at home over the next 10 months, along with the knowledge to confidently continue the practice on your own. We’ll close by sharing a small meal featuring several dishes made with miso, giving you a clear sense of how easily it can transform everyday cooking far beyond soup.
